Whenever I go to Kyoto, I stop by a liquor store, which is a special distributor of Matsunotsu no Tsukasa. The special junmai is a rare class of sake that only a limited number of liquor stores carry. This time, however, they had a bottle of nama-shu on hand, so I bought a four-pack of nama-shu and a bottle of hi-iru (hi-iri).
It is interesting to note that the sake and acidity levels change between the nama and hi-iru versions.
Today's sake was the first.

There are three sakes that I have been drinking that I must buy when I see them. Shoyuki's hiyaoroshi, Tsukibotan's barrel sake, and Matsu-no-Masa's nama-hashiori raw sake.
The umami is amazing. It is outstanding, but easy to drink and can be served with meat, fish, vegetables, or anything else. However, the sake is the star of the show, not the food. Anyway, it is delicious. Although the sake is -5 on the sake scale, this is a food sake. Sake by itself is good, but this is a too good sake to be enjoyed with a meal.
