Matsu no Tsukasa Junmai Sake is a representative of "terroir sake," which is made from the rich water system that nurtures Lake Biwa and the sake rice grown by the company's contract farmers.
It is carefully brewed with locally produced Yamada-Nishiki and Ginbuki Yuki, and has an appealing flavor that combines the deliciousness of rice with a clear crispness.
I recently visited Goshogawara and Kaneki-cho in Aomori. Osamu Dazai's birthplace, it was bigger and more spacious than I had imagined😳It was the family home of a wealthy man, not a rich man 🤯.
With that in mind, I opened a bottle of this one: 💁♂️
Let's start with the standing aroma. The nose is juicy and gorgeous, with hints of white grapes and lychee. It is light and smooth on the palate with a slight sweetness and a refreshing acidity. The slightly sweet aftertaste is refreshing with a touch of acidity.
Serve with sashimi of tuna. The light flavor of the tuna and the refreshing taste of this sake mix well and become a good balance. Delicious 😋.

At Yasubei, Ubusuna from Matsu no Tsukasa, which the restaurant recommends in the box.
It has a strong, crisp flavor, but the aftertaste disappears quickly. This is Gunma (*^-^).
Made from 100% Yamada-Nishiki from Ryuo-cho, Shiga Prefecture!
Sake that can be tasted while feeling the deliciousness of water.
Although it may feel a little watery...it is a wonderful sake with a delicious bitter taste that wells up in the mouth!
As the name suggests... it has a high water content... but it is not a watery sake... it is a sake that has a great taste of water!
This taste and deliciousness is unparalleled...it is a sake that you will become addicted to!
