Saga no Hana (Flower of Saga)
The top-tasting aroma is a gorgeous apple-like ginjo aroma.
Immediately after opening the bottle, it is like ginger ale for adults!
On the second day, it is fresh and mellow on the palate.
Slightly dry 🤔 depending on how you feel.
It gets along well with food without interfering with it.
I had it with pancakes and Sakichi's sauce and it was refreshingly delicious!
Day 5, still juicy and delicious 😋.
The last bite of the pancake with the hair on the back of my head 😭
No fancy aroma but elegant and delicious.

While on a business trip to Saga, I visited Tenzan Sake Brewery. It is a pleasant place by a river called Giongawa, with the greenery of small mountains in all directions. On my way home, I was able to thank them for their always delicious Shichida. Iwanokura" is only available in Kyushu. It is so good...I never get tired of drinking it.

Iwanokura Junmai Ginjo
Ingredients: Rice (domestic), Rice malted rice (domestic)
Polishing ratio: 55% for koji rice, 55% for kake rice
Alcohol content: 16%.
We visited Tenzan Shuzo on the way to Fukuoka after visiting a grave.
Tenzan and Shichida are probably more famous.
The people at the brewery were friendly, kind and courteous.
They explained to us that the day after our visit was the "Jeungkoshi" (the day when the steamer is overturned) and that they had renovated the brewery so that visitors could taste and appreciate the sake during the Corona season, when brewery tours are not available.
The display of sake bottles and ceramic barrels was spectacular👍.
We had it with cold sake.
The top aroma is slightly fruity.
The first impression is a clean, refreshing, and slightly sweet mouthfeel, as if it were a slurp.
As soon as the sake is swallowed, the gorgeous ginjo aroma that escapes into the nose brings in the umami.
After the umami has expanded, it finishes with a tangy spiciness.
The overall impression is clean and refreshing, but the balance is wonderful in bringing out the umami of the rice.
Memo︙It seems that Tenzan was made by the first generation, Iwanokura by the second generation, and Shichida by the third generation.

When the cork is opened, a wrinkling sound can be heard. Slightly clear and candy-colored, with no air bubbles visible. There are hints of sweet koji and a slight scent of banana.
The sweetness and sourness of the koji spread in the mouth. There is a slight stimulation in the mouth. The sweetness is strong, but there is a dry aftertaste. It cleanses the inside of the mouth.
It is delicious!
My hometown sake. I can't go back, but I'm glad I can enjoy the sake😊.

Ginjo aroma that rises when you put your mouth close to it
Aroma and richness rise up in the mouth.
It's like Saga's sake!
It disappears so quickly at the end that you can't help but take another sip...
The unique shwashiness and tingling sensation of the sake is also good.
The rice used is Yamadanishiki and Saga no Hana.
It is a delicious sake that is as good as Shichida's.
The palate is elegant, with a refreshing sweetness and acidity, followed by a zingy umami flavor.
The back palate is crisp, bitter, and spicy, making it great to finish with ❗️.
It's also a very good sake, and can be enjoyed without any entrée.
As the temperature rises, the sweetness increases and is still enjoyable.
There seems to be a nama-shu version, which I would love to drink.

This is a line of sake distributed only in Kyushu by Tenzan Shuzo, famous for Nanada. They used to have Junmai and Jundais, but now they only have Jungin (according to the liquor store).
I opened the bottle with the sound of gas leaking out. I could smell the aroma of peaches and muscat.
The sweetness of the juicy rice was firm, with a refreshing acidity and a hint of sweetness that lingered on the palate.
When paired with refreshing food (onion salad), I felt a slight bitterness.
As others have said, I also prefer this to Nanada.

It's been a long time since I wanted to drink Iwanokura's Junmai
It's been sold out!
I've never heard of it before, but I'm sure I'll get it soon.
Personally, I think Iwanokura is definitely more delicious than Shichida ☺️✨👍
