Toyo Bijin, a famous sake brewed in Hagi, Yamaguchi Prefecture, boasts high popularity nationwide.
Shunyo is a variety that has been attracting attention in recent years for its low protein content, large grain size, and 4mmp, which produces a lot of sweet and refreshing aroma like a muscat. This junmai ginjo sake is made from 50% polished rice and carefully brewed.
This bottle combines the gorgeousness of Toyo Bijin with the charm of Shunyo. Please enjoy it carefully.
When opened, it had a strong rummy flavor, so it was stored at ice temperature for a few days and reviewed after it settled down.
Refreshing white peach mouthfeel, immediately followed by concentrated white peach flavor and sugar.
Peach skin to apple skin bitterness, also strong.
A lingering aftertaste of quite a bitterness.
Balanced in spite of its strength, but I felt it was a little too strong in many ways.

This is the first Toyo Bijin Asoe I have tasted.
Gorgeous ginjo aroma.
Soft mouthfeel, no bitterness, sweetness and acidity predominate, and it is delicious without alcohol.
It was a little disappointing that the Japanese paper on the label had crumbled because it had been soaked in water to cool it down.
Served in JAL business class. The rich umami flavor is immediately recognizable as a good sake. The sake has a very good finish, with the flavor of sake well extracted, with no cloying taste, yet not too sharp. I became a fan.

The gorgeous dancing Taro expresses the glamorous deliciousness of Toyo Bijin and the elegance of its sweetness. The Mochizuki Shoten logo is on the fan. Toyo Bijin in full bloom is made with Aizan, and the gorgeousness and elegant sweetness that are typical of Toyo Bijin are still present. Compared to the nama-shu, it has a bitter aftertaste and a nice sharpness.
The aftertaste is bitter and sharp compared to the nama-zake.
Beautiful sweetness and umami of Omachi.
It is not too sweet and refreshing, and is a beautifully well-rounded sake.
