This was followed by a special junmai sake.
Compared to the special honjozo, it seems to have more sweetness and acidity... The bitterness at the end is unique to the special junmai. Personally, I prefer the special junmai? In any case, they were two delicious bottles.
This is a comparison of a special honjozo and a special junmai sake.
They are locally distributed sake.
We started with the special honjozo...
It is a refreshing, light, and very easy to drink sake. Although it is alkalo-sweetened, it is perfectly acceptable. It was delicious.
Tonight is a hot day, but I was working from home today, so I finished work and started my evening drinking time.
I opened a bottle of this one, which had been sitting for about six months 💁.
Ibigawa Tokubetsu Junmai Sake 2024BY✨
This is a special junmai sake from Sugihara Sake Brewery in Imi that is distributed within the prefecture.
From the nose, the usual pineapple🍍 flamboyance is subdued but still a sweet bouquet.
The overall taste is classic sake in the best sense of the word, but it's easy to drink with just a hint of tropicality in the attack and no sultriness 😋😋😋😋😋 It's like a sweet and tasty classic 😊😊.
On the first day, the taste was modern and classic, with a honey-like sweetness that asserted itself. The next day, the flavors are balanced and mixed together to create a delicious taste. For home drinking.
unadulterated
A refreshingly sweet, acidic, and dry taste. It is a wonder that it feels fresh even though it is fire-brewed. The sweetness is cut off by the strong aftertaste. The bitterness of the aftertaste is strong. Burnt taste. 87 points.
Sweetness: 2.7
Sourness:3.6
Dryness:3
Hinted aroma:2.2
Tonight, we decided to enjoy a clear sake once in a while, so we opened a bottle of this one.
Ibigawa Special Honjozo 2024BY ✨
Ibigawa is a brand of sake originally distributed in the prefecture by Sugihara Shuzo, famous for its Imi sake.
From the standing aroma, there is a chemical cementiness, a weak pineapple tropicality, and a refreshing herbal crispness. ☺️
The taste has lost some of the sweetness and flavor of the Imi brand.
It has a slightly aged, caramel-like richness and acidity, with a crisp, tight, aluzoe-like quality that I like a lot 😋😋😋😋.
I'll try it later as it looks even better heated up to increase its fullness 🙌
Ibigawa I found on a business trip to Gifu
Sugihara Sake Brewery's local sake from Imi (seems to be a small number, so I buy it when I find it, but alas, I never found Imi 😮💨)
The last time I bought Ibigawa it was a special honjozo (delicious), so this time I went for the special junmai sake.
Sweet, really delicious 😋😋.
Soft sweetness, not too sweet, refreshing
Feeling of rice sweetness
A dangerous one that goes slooooowly.
Slightly more sour than when I drank the honjozo before?
But I can't really tell the difference between it and the honjozo unless I compare them at the same time 🤔.
I'd like to try it next time when I have a chance!
A while ago, when I went on a business trip to Gifu, I suddenly stopped by a kind of product exhibition.
There, I found Ibigawa
Sugihara Sake Brewery's sake from Imi.
I don't often see Imi sake, but I wondered if they sell a lot of it.
But it seems to be a small brewery, so maybe there aren't that many on the market? I thought about it and bought some anyway (I still don't know if it's easy to buy or hard to buy).
One sip and...,
This feeling, delicious 😋!
I'm glad I bought it 🎉!
I'm sure it's the same for Imi too (maybe? I'm sure...?) I can feel the sweetness of the rice, but it's not too sweet, it's a beautiful sake!
Oh yeah, no sourness,
Is that why? Like you can feel the taste of rice?
But, this is a honjozo: al-soju? ..., does it taste that much like rice? A different taste? But rice?
Well, whatever, it tastes good.
