Family trip to Kawagoe. I bought a bottle of local sake at a supermarket. Melon-like aroma? Sweet like an apple? I'm not sure how to classify it, but it has a high 💦 aroma and a red fruit-like sweetness that expands and then quickly fades away without being unpleasant. Maybe it's because it's an autumn sake, but it also has a lingering umami taste that makes me want to eat something. ☺️ Kawagoe was a nice place. There are a lot of coffee shops and I want to go back again to relax. ☕️ It was peaceful but exciting. ☺️

How to drink: on the rocks Aroma: Almost imperceptible, probably because it was served on the rocks. Taste: Very refreshing. A little bit of sweetness. No bitterness at all.

National Sake Fair 2025 in Osaka㊷ Saitama Prefecture Booth ⑯ Koyama Honke Sake Brewery is a major group company in Saitama City. The World Hawk Koyama Family Group is amazing, with several other sake breweries. ◉Kinmon Sekai Taka Ginjo 50 I saw on the Internet that it is sold only in Saitama. It has a sweetness, umami, and richness that is standard and delicious. The taste is very consistent, as expected from a major sake brewer. After thanking the brewer of Ishii Shuzo for explaining everything to us, we moved on to the next booth. I asked the Saitama Sake Brewers Association to hold an event for restaurants, liquor stores, and the general public by itself, like those in Yamaguchi and Nagano prefectures.

National Sake Fair 2025㊶ Saitama Prefecture⑯ Koyama Honke Sake Brewery, Nishi-ku, Saitama City A major sake brewing company that forms the World Taka Koyama Family Group together with Kitashika (Kita-Akita), Yukitsubaki Sake Brewery (Echino Yukitsubaki), Echigo Sakura Brewery, and Kyohime Brewery. Also owns the Nadahama Fukutsuru Brewery in Nada, Hyogo. Marushin Masamune is a relative of the Koyama Shuzo Brewery in Tokyo, which closed down and is now being sold by the Koyama Honke Brewery. They also have a factory in Fushimi adjacent to the Kyohime Brewery. I've seen and drunk sake from the affiliated breweries, but this is the first time I've had sake from the Koyama Honke Brewery in Saitama. Polishing ratio 50%, domestic rice, 15 degrees, Sake degree +4, Acidity 1.2 990 yen This sake is only available in Saitama. Released to commemorate the 200th anniversary of the company's founding. It is quite fruity and easy to drink. It has a sharpness that is typical of Asoe. However, it has a stable and orthodox taste like a major manufacturer. As expected, the cost performance is outstanding. I think the reason why Saitama is the 4th largest producer in Japan is because Koyama Honke Brewery is located in Saitama 🤔. 10 yen per bottle will be donated to Saitama Prefecture NPO fund "Green and River Restoration". I heard they are competing with Chiba for 4th place, but Chiba also has big companies like Godo Shusei and Takara Shuzo in the prefecture, so I guess that pushes them up in the rankings 🤔. I forgot to take a picture 💦. Next stop: Tokyo!

Here is today's sake! It is a local sake from Saitama, Kinmon Sekai Taka 🦅. I tasted this sake when I visited Saitama and bought it because I especially liked it hot 🤗. The top aroma is a little subdued, like watermelon 🍉I first drank it chilled, and the sweet and sour taste is softly followed by a sourness that flows down the back of the throat comfortably 🍉. ☺️ It reminds me of a very refreshing summer sake! But the best part of this sake is when it is heated up! The sweet and sourness of the earlier mentioned sake switches from a fruity fruit sweetness to a mellow rice sweetness when heated! 🤗Ummm I just bought it because I like this deliciousness! It is good chilled, but even better hot! I don't think there are many sake that can be served chilled, but even better hot! I still have a few more bottles of Saitama sake to enjoy! Have a great night with good sake ✨🍶✨!
