National Sake Fair 2025㊶ Saitama Prefecture⑯ Koyama Honke Sake Brewery, Nishi-ku, Saitama City A major sake brewing company that forms the World Taka Koyama Family Group together with Kitashika (Kita-Akita), Yukitsubaki Sake Brewery (Echino Yukitsubaki), Echigo Sakura Brewery, and Kyohime Brewery. Also owns the Nadahama Fukutsuru Brewery in Nada, Hyogo. Marushin Masamune is a relative of the Koyama Shuzo Brewery in Tokyo, which closed down and is now being sold by the Koyama Honke Brewery. They also have a factory in Fushimi adjacent to the Kyohime Brewery. I've seen and drunk sake from the affiliated breweries, but this is the first time I've had sake from the Koyama Honke Brewery in Saitama. Polishing ratio 50%, domestic rice, 15 degrees, Sake degree +4, Acidity 1.2 990 yen This sake is only available in Saitama. Released to commemorate the 200th anniversary of the company's founding. It is quite fruity and easy to drink. It has a sharpness that is typical of Asoe. However, it has a stable and orthodox taste like a major manufacturer. As expected, the cost performance is outstanding. I think the reason why Saitama is the 4th largest producer in Japan is because Koyama Honke Brewery is located in Saitama 🤔. 10 yen per bottle will be donated to Saitama Prefecture NPO fund "Green and River Restoration". I heard they are competing with Chiba for 4th place, but Chiba also has big companies like Godo Shusei and Takara Shuzo in the prefecture, so I guess that pushes them up in the rankings 🤔.
