It seems that Mr. Bouken and I were chatting and had two bottles of Jigin opened.
I was already too drunk to remember much...

Fruity, sweet and delicious, but also rich and not too heavy.

I'd had this before, but I'd forgotten about it. The lactobacillus and umami that is typical of a sake yeast yeast yeast yeast is well-balanced with a moderate tightness.
The time flies when you are having fun... The party ended around 7:00 p.m. with 14 people in total.

On the way home, I got off the station alone to change lines, had some ramen and went home, it should have taken me about an hour to get home, but somehow it was past midnight when I got home...
I was drunk and lost for about 4 hours after eating ramen😅
Strangely enough, I didn't have a hangover the next day, but I guess that's because I drank good alcohol.

Jikin Junmai Ginjyo Senbon Nishiki Hiiri
The aroma is mildly capricious (maybe a little alcoholic?).
The mouthfeel is quite gorgeous pineapple 🍍, and from the middle the taste is stable as usual with Jikin's typical bitterness (no expressive power at all)! 😍
I wonder what is the bitterness in the aftertaste that is unique to Jikin...? I'd like to know more 🧐.

Lastly, we asked them to open a bottle of Akabane-Yumachi, which we were curious about as well as Hakutsuru-Nishiki 🙇.
I've never even seen Jikin Namiki Akaban Yumachi before!
It's refreshing with a little lactic acidity.
It's delicious with sweetness and umami!
The party started after 2pm and ended after 7pm 🥺.
I think I was talking too loud so I hope I didn't disturb the neighbors💦.
I was so happy to be able to drink so much rare sake!

The taste needs no explanation, but the beauty of Jikin is that it never disappoints ✨.
There is almost no top notes.
The nose has a fresh, acidic, fruity aroma like strawberries and lychee 😊.
The sweetness and acidity come in late, while the umami of the Omachi rice can be felt from there, and they mix together to keep just the right balance until the end 😋.
It didn't disappear all at once at the end, but slowly and gradually. ☺️
I'm always impressed by Jikin's popularity because they always taste great no matter what they drink 😍.

I had been curious about the YASUBAE's metaphysical wine sitting in the cellar since I first entered their house, and when I asked to drink it with Nemuchi-san, he opened the bottle for me 🙏.
It was a mature sweeter than the other Jikin I've had so far, with a beautiful but firm sweetness and umami!
The aroma is very fruity!
It seems they only have hi-ire, but I wish they would serve it raw too!
I drank Hakutsuru before, which was rumored to be a generic Jikin, but I thought it was a pretty good reproduction of Hakutsuru 🤔.
The Sakai branch staff went home around the time I drank Hakutsuru Nishiki 🚃.
It had not been available for a long time and I was hesitant to open the package because I thought it would be a waste, but I took the plunge. It was a good party with hand-rolled sushi.
I would like to have another chance to try it.

This time it's the Jikin again 😋✨.
The aroma is subdued, with a sweet, gentle ginjo aroma reminiscent of muskmelon and white peaches.
It has an elegant fruitiness that will arouse your desire for sake 😆.
The taste is juicy and rich, with a rich rice flavor and sweetness that spreads in the mouth. The acidity that comes later balances it out. ☺️
It has a fresh feeling even though it is fire-roasted, and it has a lightness like orange liquor.
The bitterness is almost imperceptible, and the smooth, elegant aftertaste lingers...
As it gets to room temperature, the umami of rice and soft acidity harmonize, and it becomes more tender and gentle on the palate.
It is a beautiful sake that would go well with autumn flavors 😋.

I've only had Mie Yamadanishiki once in the past, but I remember it as mild as Jikin-sama 😋.
