Lightly colored and umami
Cold: - Strong acidity with a hint of deliciousness
Lukewarm: ◯ The acidity is still there even though it opens up the umami taste.
My best! The acidity is transformed into umami.
Kaika Junmai Sake Arabashiri
Daiichi Shuzo / Sano City, Tochigi Prefecture
Daiichi Shuzo is the pride of Sano, and last year, on the occasion of its 350th anniversary, the toji (master brewer) was changed from one generation to the next. This is one of my personal favorites among Kaika.
It is juicy and mellow on the palate, fruity, with a taste of rice, acidity, and bitterness.
It goes well as an aperitif or with dessert. It also goes well with brandy-soaked fruitcake.
The design and colors of the label are gorgeous.
The annual Risshun morning squeeze.
This year we got three kinds.
First, we have this Kaika.
The aroma is mild, and in the mouth it has a gentle sourness and bitterness.
There is a slight sourness that lingers in the mouth, but it is refreshing and delicious!
