さなDRice used is Sagabiyori The rice is aged at room temperature for about 2 years at home. I remember that the color was originally a light yellowish color, but I think it has become slightly darker. The flavor has a light aged feel, which is what I was aiming for. The sweetness is also felt with a hint of zing. It has changed a lot from the light, dry, and refreshing type. It was a little sharp, so we left it for a while. The corners were removed and it became more rounded. Finally, I heated it up and it was the best ❣️ This was the first time I felt the fruity flavor in a heated sake. I tried room temperature aging for the first time this time and was first of all satisfied. I think I'm going to be addicted to it: ‼️

タロー昨年の秋、佐賀の酒蔵で試飲して即購入。 九州で北海道産きたしずくのお酒があるとは驚き。 少し甘めで、メロンのような香りの、爽やかな口当たり。炭酸感は控えめ。 ただ、酒蔵で試飲した時の方がもっと感動したような…現地のバイアスなのか、記憶が美化されたのか、開けるまで勿体ぶったからなのか、しかしすごく好みな味。

ジョセフィンHAMA BAR②. The second drink of the five-drink comparison is this one, which is written as "Laughing Sake" and reads as "Egushi". It is made from 100% Yamada-Nishiki rice grown under contract with local farmers. The aroma was not very pleasant, but it was rich, mellow, slightly dry, and well balanced. This HAMABAR is located in a station where trains rarely pass, but when he saw me drinking it, he asked me to have one too. He said he missed the train (the timetable of conventional lines had changed after the opening of the Shinkansen bullet train on 9/23) and had to kill two hours by touring sake breweries. I laughed 🤭 because there was only laughing sake.

ちょろき HAMA BAR⑤. The last one is "Kouhime" on the far left. It has a slightly sour taste and is very impressive. My friend said she could tell even blind. Really? boukenPurchased with Tenryo sake cup at Okuhiroya in Kayashima. They stocked it because it was well received at a Saga sake tasting event held for sake retailers. Probably not normally available in the Kansai region. The rice is made from Hokkaido's Kitashizuku. I know Nabeshima also uses Kitashizuku. It has a beautiful sake quality for the rice polishing ratio. There is a slight sweetness, but it is also slightly thin and heavy. It also has a nutty taste. It tastes like nothing else.

遥瑛チチLast week's day trip to Nagasaki. Actually, we didn't go straight home, but stopped along the way 😁. We got off at Hizenhama Station (Kashima City, Saga Prefecture) on the Nagasaki Main Line. If Kyushu becomes an independent state, Kashima City in Saga Prefecture will be a strong candidate for the sake capital 😁. We only had less than 2 hours to spend in the city, so we first wandered around the station area. The sake brewery street near the station is literally dotted with sake breweries. We also took a peek at Tomikuchiyo Sake Brewery, famous for its Nabeshima sake. But it's not popular on a Sunday afternoon 😅... Is it always like this? After 30-40 minutes, we returned to the station and went to "Hama Bar", a sake bar attached to the station building. I was told about this place by Rumion-san and Rika-san, and I was really looking forward to going there. We challenged ourselves to a junmai ginjo drink comparison (800 yen) from 5 different sake breweries in Kashima👍! We had Ariake seaweed and cream cheese 🧀 with our entrée 🤗. The first glass Kohime DEAR MY PRINCESS Junmai Ginjyo Genjyo 100% Yamadanishiki produced in Saga Prefecture Fruity aroma of Japanese pear. Smooth and smooth with sweetness and umami. It also has a nice sharpness. ❗️ First time to drink Kouhime ❓It's been a long time ❓ Either way, it's delicious🤗

こんけんThis sake is brewed with sake rice produced by a sake rice farmer we met at Asahiya, a sake shop we go to when we visit Saga.　It is an easy-drinking sake like white wine. The illustration on the label seems to have been drawn by the sake rice farmer. I also bought the sake from another sake brewer who also distributes sake rice to other breweries.　I will post more when I drink it again!
