14/28 Hachikaisan Second Fermentation in Bottle White Koji Awa.
It has a rich citric acidity from the white malted rice, a fine bubble texture with a low gassiness, and is useful as an aperitif.

13/28 Brooklyn Kura Grand Prairie.
Brooklyn Kura brews authentic sake in New York City, and although the brewers were unable to come to Japan, they offered tastings at the booth of Hakkai Shuzo, with whom they have a technical partnership starting this fall!
This sake is made with Yamadanishiki grown in Arkansas. It has a slightly complex flavor with a clean mouthfeel.

Dec. 28 Brooklyn Kura Number Fourteen.
Brooklyn Kura brews authentic sake in New York City, and although the brewers were unable to come to Japan, they offered tastings at the booth of Hakkai Shuzo, with whom they have a technical partnership starting this fall!
A miracle bottle of freshly pressed bottled sake brewed in Brooklyn was brought in by manual transport, and the freshness of the sake was not compromised and tasted as fresh as the local tapping. It is a fresh and juicy sake!

May 28 Shin Tsuchida Princess Sally.
Not sake rice, not japonica rice, but long-grain indica rice, which accounts for 90% of the world's rice, is used in this one, which is full of romance and has the potential to expand the future of sake brewing in the world.
Compared to the regular Shin Tsuchida, it has a slightly lighter and less umami flavor. We would definitely like to taste it as an accompaniment to curry!

4/28 Tsuchida 99.
Koji ratio 99%, still a punchy acidity when served at room temperature. It is an exquisite marriage with the strong flavor of beef stew!

3/28 Yoshida Kurau Hyakumangoku No Shiro Kijoshu.
Next up was the Hyakumangoku No Shiro kijoshu brew. The taste is fresh, clear, and stable!
This kijoshu has a lower alcohol content than the regular Hyakumangoku No Shiro, which originally had a lower alcohol content of 13 degrees, but now has an even lower alcohol content of 12 degrees. It has a mellow and sweet taste with the freshness of Hyakumangoku No Shiro, and it is outstandingly delicious!

1/28 Urasato Junmai Ginjo Namahoshi.
The first glass. Unlike the recently popular sake with strong acidity, this sake is a beautiful sake with a good balance of sweetness and umami!
