Light amber-colored sake, with a dry taste with a distinctive bitterness and a unique flavor of rice in the mouth 😅.
When I swallow it, I feel that it leaves a bit of a bitter taste in my throat...that's why I gave it 3 stars 🤗.
I searched for this sake on the internet and found out that it is a junmai sake brewed with the oldest existing sake yeast called "Saccharomyces sakeyabe (No.16)" and the oldest seed malt called "Aspergillus oryzae", made from Kurume's sake rice "Yume-Ichiken" 🤔.
So that's why it had such a unique taste... I felt like it made sense somehow 😳.

The label description reads, "Mellow and white wine-like with a fruity sourness of apricots, strawberries, and sudachi..." 🧐.
When you put it in your mouth, it tastes like a white wine with a strong acidity.

This is the first brand we have encountered, a bottle of sake we found and purchased because of its unusual bottle shape. I have already encountered this brand, but...
The bottle is a whiskey bottle itself. Even the clerk at the store's cash register at the time of purchase didn't realize it was sake at first😅.
This sake has a caramel-like aroma derived from the barrels and the sharpness of ginjo. It is also unfiltered so that you can enjoy the flavor of the barrels 🤗.
When poured into a glass, it has a slightly amber color. Sake from sake barrels smells like cedar, but this sake has the aroma of Scotch whiskey barrels, like caramel 😊.
It has a bitter and sour taste in the mouth, and I think it is a sharp and dry type of sake 😋.

This is a new brand from Kiku-Masamune Sake Brewery.
The fruity aroma and the mild and full flavor that spreads on the palate are the characteristics of Yamadanishiki, and are well expressed in this ginjo-shu 😋.

Room temperature: The ginjo aroma is not very strong. It is perceived as mildly sweet, but it is a smooth, slightly dry sake 😄.

The image of Junmai Daiginjo-shu...subtle aroma, fruity taste was not so much felt. It may be a characteristic of the combination of sake rice and yeast 🧐.

It is a dry sake with a crisp but robust feel 😊.
It reminded me of a kagura (Shinto music and dance) performance and a giant snake I saw at a shrine in Yunotsu Onsen, a town in the Iwami Ginzan Silver Mine shipping port that I visited on a trip to Shimane 🤗.
I had it lukewarm (40℃) to top-heated (45℃).
It has a mellow taste and a deep drinking experience, which may be more to my liking.
