MICHIKAKE Junmai Genzake 100% Yume-Ichiken from Fukuoka Prefecture ⭐️⭐️⭐️ Wakatakeya Sake Brewery Kurume-shi, Fukuoka Polishing ratio 70%, ALC 16 Light amber-colored sake, with a dry taste with a distinctive bitterness and a unique flavor of rice in the mouth 😅. When I swallow it, I feel that it leaves a bit of a bitter taste in my throat...that's why I gave it 3 stars 🤗. I searched for this sake on the internet and found out that it is a junmai sake brewed with the oldest existing sake yeast called "Saccharomyces sakeyabe (No.16)" and the oldest seed malt called "Aspergillus oryzae", made from Kurume's sake rice "Yume-Ichiken" 🤔. EIGHT⭐️⭐️⭐️ Okunomatsu Sake Brewery Nihonmatsu-shi, Fukushima Rice polishing ratio 65%, ALC 8 degrees Sake degree -84 Acidity 6 What is sake degree -84 😅? This sake tastes like a sweet white wine. If you didn't know, you would think this is white wine... not sake 😊. Out of the 3 types of sake, this was the one that suited my taste the best 😋. Yumeno-Kanbai Old Sake 2000 ALC 20-21%, with alcohol Tsurumi Shuzo, Tsushima City, Aichi Prefecture, Japan It has been aged for 23 years since it was brewed 🧐. It has a caramel-like aroma unique to old sake, and in the mouth it tastes like an aged single malt whiskey 😋. I thought it would be better to drink it on the rocks with ice 🤗. Ginjo-shu 100% Gohyakumangoku ⭐️⭐️⭐️⭐️ Kumazawa Shuzo Chigasaki City, Kanagawa Prefecture Polishing ratio 60%, ALC 15%, Alcoholic The ginjo aroma is almost imperceptible, but when you put it in your mouth, a faint fruity aroma escapes into your nose 😊. TENKIN DENRAKU Junmai Daiginjo-shu ⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 15 degrees The first brand I encountered and the first bottle of sake I found and purchased with an unusual bottle shape was from Ibaraki Prefecture. The name of the brewer and the brand name were both new to me 🤗. When poured into a sake cup, it had a subtle ginjo aroma and was a slightly dry sake with a full and crisp flavor on the palate 😋. The label description reads, "Mellow and white wine-like with a fruity sourness of apricots, strawberries, and sudachi..." 🧐. When you put it in your mouth, it tastes like a white wine with a strong acidity. Fruity sourness of apricots, strawberries, sudachi, etc.] 💦 Hmmm, I couldn't really understand it 😅. Junmai Ginjo Genshu Unfiltered⭐️⭐️⭐️⭐️ Aged in tablose whiskey barrels Polishing ratio 60%, ALC 17%. This is the first brand we have encountered, a bottle of sake we found and purchased because of its unusual bottle shape. I have already encountered this brand, but... The bottle is a whiskey bottle itself. Even the clerk at the store's cash register at the time of purchase didn't realize it was sake at first😅. This sake has a caramel-like aroma derived from the barrels and the sharpness of ginjo. It is also unfiltered so that you can enjoy the flavor of the barrels 🤗. When poured into a glass, it has a slightly amber color. Sake from sake barrels smells like cedar, but this sake has the aroma of Scotch whiskey barrels, like caramel 😊. Junmai Ginjo-shu 100% Yamadanishiki from Hyogo Prefecture ⭐️⭐️⭐️⭐️ Polishing ratio 59%, ALC 15-16 degrees This is a new brand from Kiku-Masamune Sake Brewery. The fruity aroma and the mild and full flavor that spreads on the palate are the characteristics of Yamadanishiki, and are well expressed in this ginjo-shu 😋. Junmai Daiginjo-shu Roujohaari Momohana (rojo haana ari toka) ⭐️⭐️⭐️ 100% Hyogo-Kitanishiki, Yeast: Ogawa No. 10 Polishing ratio 50%, ALC 15.5 degrees Room temperature: The ginjo aroma is not very strong. It is perceived as mildly sweet, but it is a smooth, slightly dry sake 😄. Cold sake: Not so much sweetness, but a little sourness and bitterness in a mellow and slightly dry sake 😃. The image of Junmai Daiginjo-shu...subtle aroma, fruity taste was not so much felt. It may be a characteristic of the combination of sake rice and yeast 🧐. Yamata-no-orochi Dry special junmai-shu ⭐️⭐️⭐️⭐️ Polishing ratio 58%, ALC 15%. It is a dry sake with a crisp but robust feel 😊. It reminded me of a kagura (Shinto music and dance) performance and a giant snake I saw at a shrine in Yunotsu Onsen, a town in the Iwami Ginzan Silver Mine shipping port that I visited on a trip to Shimane 🤗.
