Fukurokuju Shuzo brews Yamadanishiki every year, but it used to be all Daiginjo-exhibited sake. This is the only Junmai Ginjo brewed with Junmai Ginjo, and it is a very valuable limited edition sake. It is a limited edition sake with high potential, made from 100% special grade Yamadanishiki from Hyogo Prefecture, and is shipped in full force during the hiyaoroshi season. The sweet, gorgeous, beautifully fruity, slightly cute and delicate flavor is like a fine white wine. It gives off a rich flavor with a good sense of maturity after the fall, and the lively acidity tightens the aftertaste, giving it a body that you will never get tired of drinking. In any case, it is an autumn sake that will be simply delicious and enjoyable as the cup progresses.

When sake is brewed with sake instead of water, it is called kijoshu. Shinsei-style sake is made with junmai sake, which has no alcohol added. It has a mild aroma of honey and citrus grapefruit, and in the mouth it has a rich sweetness reminiscent of the finest honey or noble wine, with an assertive acidity unique to Shinsei that gives the sake its full flavor. A writer who once visited the brewery during a heavy snowfall created the sake name "Yukino Kayasha" from the winter scenery of snow-covered farmhouses with shingled roofs that dotted the road on his way home. This light, slightly effervescent light nigori sake has a nostalgic sensibility, as if such scenery were directly expressed in the sake. The rice used to make this sake is called Rikuwaden. This rice is not familiar to many, but this rice was also arranged by President Takagi of "Jyushiyo". It has a slightly floral sweet aroma, and when you taste it, it has a moist texture and a subtle sweetness that spreads on the tongue. It also has a crisp acidity, giving it a tighter impression than Omachi. It has a nice sharpness and is delicious on its own, but it can also be enjoyed as an in-between-dinner drink.
In order to preserve the flavor, each bottle of sake is carefully bottled by hand and heated before bottling. Please enjoy it cooled down moderately and with a nice aroma.
