ellieYesterday I was on a business trip to Yokohama. I found a liquor store called Ichiishiya, looked at the ample showcase, and bought a bottle. I'll save this one for later.
I also opened a bottle of this one because I needed to consume the sake hibernating in the fridge as soon as possible.
This three-day weekend was a complete day off.
I'm cleaning the house, changing clothes and organizing the bedding. I also have to do some work, but I have time to drink.
First time at Eiko-Fuji. It's the one that was all over the sake crocodile.
It's been a long time since I've had a slightly sparkling, sweet and sour one 😁I really like this kind of beer. I'm glad I bought a lot of bottles.
Before I knew it, I had checked in 8 different types of Yamagata sake 😲.
The snacks were fried taro, bonito tataki, and beef hormone yakitori. ellieI thought it was Tenju Shuzo because it was called Chokaisan, but it wasn't, it seems to be a brewery specializing in dobrokusan. I noticed this after I bought it😅.
There were black and white, but I couldn't get my hands on the black one, which claims to be rich, so I decided to go with the white one in favor of the easy-drinking one 🙃.
I think I had had a Dobrok a long time ago 🤔 I don't remember. And what should I have as a side dish? All I don't know. When I opened the bottle, it didn't particularly blow me away.

The side dishes were pork salt nabe and chutoro (medium fatty tuna) sashimi.
I think it goes better with oily food than sashimi. ellieMy favorite Sawaya Matsumoto, I opened a bottle because I had some in stock 😋.
Basically, I like to try different kinds of sake, but this one is exceptional. I drink it regularly.
I turned it upside down and it spilled. I didn't have an image that it fizzes strongly....
I had it with bonito tataki and vinegared pork.

I've always been curious about Nabeshima since it's been mentioned a lot in the sakénowa thread. Mishimaya Sake Shop seems to have several varieties on permanent display 🧐.

Good aroma. Slightly effervescent. Not much acidity (I've been drinking a lot of high acidity lately, so maybe my taste buds have gone crazy).
It's sweet and robust.
I wonder if this purple is the basic one from the various postings.

In addition to Kuboyama Sake Brewery and Yokozeki, there are also Mishimaya Sake Brewery in Izu, Shinoda Sake Brewery and Yamada Sake Brewery in Shimizu, etc. They have completely different varieties of sake. Thanks to this, I have 8 bottles of sake in my fridge, including those given to me as gifts or for memorial services 😓.
Now, it's Obon. It's a time when work is light, so I drink even on weekdays.
Yamamoto is the most popular at Mishimaya Sake Shop. The owner says "black is the basic", so I did as I was told 🫡.
The taste is...refreshingly sour and not too sweet. Refreshingly light and dry? It is 😁You know, it's similar to Goemon, but I think this one is easier to drink and has more character.
But I've been opening sake at a fast pace lately... I have to be careful.

A long time ago 😆 I lived in Numazu for a job transfer. I learned from Nagashima-san, a liquor store in Numazu, to keep sake in the fridge even if it's not fresh 😅.

How does it feel to have a sake degree of -17?
The mouthfeel is definitely sweet. But it is different from the sweetness of Haruyingsutsuyu. It is not too sweet.
Furthermore, the acidity is quite noticeable 😆 Is the sweetness not noticeable due to the acidity? I am happy about this because I recently realized that I like acidity.
In general, I liked the taste!

I bought this sake at Mishimaya Sake Shop in Izu Nagaoka in February, and I regret that I should have bought Aizan as well, since it was also on sale. However, this liquor store had a great selection. Nabeshima and Yamamoto stood out.
The taste...this is it! It tastes just like the first time I encountered this sake! The fizz is strong and juicy, but with a nice sweetness and umami. I realized that the reason I felt that Sairai and Denshokiku were lacking was because I was craving this flavor.
We had it with pork miso nabe and bonito tataki. ぴーたまGentle mouthfeel.
No top notes.
Umami and sharp, gentle and sharp.
Medium sweetness and spiciness, perfect with Japanese food 😋😋.
The alcohol feeling on the nose is also pleasant.

In a wine glass, it has a certain grapey, gorgeous ginjo aroma. I drank it after Sono Kangiku on the first day and didn't notice 💦. ぴーたまThe upper aroma is refreshing, but small in quantity.
The tangy, slightly gaseous taste, high alcohol stimulation, and bitterness from the umami taste finish off the taste.
The balance is so good that the 18% alcohol content is not noticeable.
It is a delicious sake that will keep you going for another sip while enjoying your meal.
