This is an active sake for professionals only, and even though it was released in December, it was quite rambunctious. It took me 15 minutes to open the bottle. After a slight scent unique to nama-shu, the mouthfeel is not as springy as I expected. However, the fine carbonation supports the attack. The freshness that spreads in the upper part of the mouth is followed by a bitter taste in the throat. I had it with grilled yellowtail, and it was the best match.

It foams as soon as the bottle is opened. This is an unexpected development for a Junmai Ginjo. When poured into a glass, it is lightly muddy, and the mouthfeel is filled with a swooshing sensation, indicating the Toji's intentions. Both the aroma and the sensation down the throat are completely fruity, making it a perfect match for horse mackerel sashimi. The richness of the aftertaste is not typical of Niigata sake.

The aroma is a calm melon smell. The mouthfeel is soft, but soon a sense of astringency spreads through the mouth, which turns into an indescribable sweetness that is excellent. The fact that there is a catch in the throat can be said to be a solemn self-assertion. Only sake from Yamagata can produce this kind of richness in a Junmai Daiginjo. This is a distinctly different sake from those that concentrate on polishing.

Strong fruity aroma. But the mouthfeel is almost like fresh water. As soon as it enters the mouth, the unique taste of namaishu spreads, followed by a faint bitterness. The end result is a peculiar aftertaste that is typical of Yamagata. This is a limited edition sake, but we were not able to visit the brewery this year. We are grateful for the encounter with the first time sake rice called Yukigami.

Faint Ginjo aroma. There is no resistance on the palate, and the fruity taste spreads in the mouth. However, as it passes down the throat, the faint bitterness disappears with a sharpness. Although the lack of peculiarity is not enough, I admire the perfection of this sake.

Champagne-like opening sound. However, there is no sense of fizziness. A faint fruity aroma is followed by a surprisingly light bitterness on the palate. It is interesting because it is mild in the mouth. It is interesting because it is mild on the palate, but not too light in the throat, but the overall calmness is satisfying.

Although it is raw, it does not have the buoyant feeling of Shiboritate. It is a very calm sake. There is almost no aroma, but the full-bodied softness on the palate shows the kindness of the brewer. At the same time, the bitterness through the throat is challenging. Please try it with cold yellowtail sashimi.

This is a special sake that is not sold on the market (by the Nishi-Yamagata Sake Brewers Association). Every year the taste is different, but this year it is light, mellow, and easy to drink. On the contrary, it has no richness and is not interesting. In particular, it is not suitable for dishes with strong flavors. We have high expectations for next year.

Although it is called "sparkling", it is not so swooshy. It has the unique mouthfeel of Hatsushibori nama sake combined with a faint acidity, giving it a more profound finish.
