Dry, as is typical of Echigo-Tsumari sake.
You can feel the aroma of rice.
Sourness and light astringency in the aftertaste.
It is truly a "food sake"!
Japanese Cuisine at Soma in Mashiko Town, Tochigi Prefecture
Warabi-mochi-like aroma
Sharp sourness and umami flavor
Very good with Japanese set menus!
Comparison of drinks after the tour at Tonoike Sake Brewery
Daiginjo Yamadanishiki
Melon aroma and sweetness, somewhat classic
Junmai Ginjo Unfiltered Nama Sake Yuki Sanran
Moderate aroma, orange aroma, mellow flavor, cohesive, smooth, and robust
Yamahai Junmai
White wine? Impression of harmony between umami and acidity.
Mellow when heated! Umami like oshiruko (sweet red-bean soup)
It is a wonder that the taste changes with temperature!
My favorite was the Yamahai Junmai!
I thought the aroma would be subdued.
Sweet and fruity taste like green apple from the moment you taste it.
There is also a hint of gasiness.
That may be why the edgy acidity in the aftertaste is so intense.
The taste is very vivid, so to speak.
A vivid sake, so to speak.
I like it very much!
At Shimazaki Sake Brewery in Nasukarasuyama City, Tochigi Prefecture
Comparison of one year, three years and ten years aged sake
One year old -> Fruity ginjo aroma, deep sweetness and sharpness in balance.
Three years old -> Tastes and smells like honey! I want to drink it in small sips.
Ten year old -> Mellower and less peculiar, with a slight saltiness or astringency? Astringency?
I don't think I would know what kind of sake it is if I drank 10 years old without being told anything about it.
It was a valuable experience for me!
Good morning, Mami 😃.
Drinking comparison at Shimazaki Sake Brewery from Sohyo at Soba Restaurant in Utsunomiya! Good course to enjoy Tochigi sake 🤗.
Are you traveling to Tochigi 😊?
At Soba Kobo Tsuchiya in Utsunomiya City, Tochigi Prefecture
It seemed light and dry with a hint of melon-like sweetness.
The sweetness stood out with soba miso, the dryness with soba sauce, and the umami with oyakodon (a bowl of rice topped with chicken and eggs).
In a good sense, it is a sake that goes well with everything and is a beauty on all sides.
