This is Nobu the Sake by Hokusetsu Sake Brewery, a gift from us. The label is a private design, so I will omit it.
A fresh junmai daiginjo with a pineapple aroma. After a while from chilled, the lingering edge? The end of the aftertaste? It is also good that the bitterness comes in at the right time.
I forgot to take a picture of it late at night when it was chilly at the bottom, but it is also very good with motsu nabe (hot pot with pork and vegetables).
Mellow, medium-dry. Sleek mouthfeel with a slightly full-bodied aroma. The core is sweet. The lingering slight acidity and bitterness are also pleasant.
It is served with hot boiled tofu on a cold night.
It is not too sweet, not too heavy, and has a smooth taste. It also feels cool on the throat. It is neither too heavy nor too light.
The slight bitterness that lingers in the aftertaste is also delicious.

Return it from snow-cold to room temperature. The light but sweet alcohol gradually expands. The umami flavor increases, but there is no lingering aftertaste, and it is very light. But that is good.
The soft, fresh sweetness has a pear fruit sensation. The aroma that passes through the nose has a round depth. The smooth flavor is persistent without any elements that can be stuck in the mouth. It leaves a pleasant sweetness and spiciness on the tongue with a moderate aftertaste. We enjoyed it in a wine glass recommended by the site.
The sweetness has umami and the fullness of rice. It is totally different from the "fruity" sweetness that is often described. The lingering aftertaste has a slight bitterness. The core of the wine is well defined in its mildness. It made the meal more colorful.
