It has a sharp acidity and the full sweetness and depth of rice swollen with koji. The mild sweetness is reminiscent of pound cake, which is an exaggeration, but it is also reminiscent of that direction. And the lingering mild tartness is gradually followed by bitterness. We enjoyed it with our favorite Shunyinchu cup bottle.
