Tochigi Ai🥰 at the tasting I didn't bring any draft sake to last year's traveling SAKE, but this time I brought 4 different types of draft sake 😳. The ones we drank were Junmai Ginjo Ichigo Yeast Shiboritate Nama Nama Sake Made with Nasuhikari. I bought a hi-ire version of this last year, but I have the impression that the hi-ire version had a stronger sweetness. Daiginjo-nama sake brewed with oshiroibana yeast The rice is Gohyakumangoku. It is very gorgeous, sweet and juicy, delicious and my favorite, but I was hesitant to try it. Daiginjo-nama-genshu brewed with abelia yeast The rice is Yumesasara. It was also my favorite, but I gave it up because it was too expensive 😢. Junmai Ginjyo Yumesasara Kozake 3 years old raw It was aged at low temperature, but it was quite matured.... The 8 year old Ichinokura that we had at Icoma Sake Shop was more beautifully aged and tasted better. I found it a little spicy, but I bought the most reasonably priced raw sake with the 🍓 yeast.

Hakuso Shuzo Tochikane Junmai Ginjo with Strawberry Yeast This brewery is located in Nakagawa-machi, Tochigi Prefecture. Tochigi-grown "Nasuhikari" rice polished to 55%. It has a soft and elegant aroma, a firm rice flavor, and a gentle and refreshing acidity. Purchased at Hankyu Department Store's Traveling SAKE. The rice is Nasuhikari grown by the company, and the sake is freshly brewed. It seems to have a strawberry flavor. It is not so sweet, but dry and has a nice sharpness, so it is good as a food sake. If Amabuki's strawberry yeast is like thick strawberry, Tochikane is like dried strawberry. If it is fire-brewed once, I would like it to be a little fresher.

Tochigi sake featured in Hankyu Department Store's Traveling SAKE. Tochikane Daiginjo. Tochikane Daiginjo is made from Aizan and uses Abelia yeast. It is rare to use flower yeast in Aizan, isn't it? Tochia Akane Daigin Aiyama🎵 Tochigo-Akane Hana-Kobo Aiyama🎵 Is it because of the use of floral yeast that it has a unique atmosphere while also being Aiyama-like? I didn't take a picture of it, but I also drank a sweet potato shochu made with strawberry yeast. It had a strong sweetpotato taste and I wanted to drink it with soda.

Tochigi sake featured in Hankyu Department Store's Traveling SAKE. This is the first time I learned about this brewery at this event. It seems that Tochigi produces more shochu than sake. It was delicious, with a unique and robust sweetness, but I was attracted by the strawberry yeast 😅.

Tochigi Prefecture: The booth of "Tochi-Akane, Tochi-Akane" by Hakuso Shuzo Co. It looks like a small brewery, but it is the only brewery in Tochigi Prefecture that produces all types of shochu: potato shochu, barley shochu, and buckwheat shochu. Tochikane Junmai Ginjo with strawberry yeast Tochikane Junmai Ginjo Yumesasara Tochikane Junmai Ginjo Strawberry Yeast Brewing" seemed to have a little strawberry flavor. This time, I thought that I personally like Yumesasara a lot. It was my first time to drink shochu at the tasting, and I didn't even keep track of which brand it was, but this one was really good. I heard that sake production is low and shochu production is higher.
