Hakuso Sake Brewery, located in Nakagawa-cho, Nasu-gun, Tochigi Prefecture, is a long-established sake brewery founded in 1887. Using water from the Nasu Mountain Range as brewing water, the brewery continues to brew sake that is close to the local rice and nature. While preserving tradition, the brewery is not afraid to take on new challenges, and is one of the most ambitious breweries in Tochigi, focusing on innovative sake brewing using fruit yeast. Tochiakane Strawberry Yeast Brewing" uses yeast isolated from strawberry flowers to maximize the power of natural fermentation. It has an impressive rosé-like color with a light crimson hue and a sweet, fruity aroma. The taste is light and easy to drink despite its 17% alcohol content, and goes well with both Japanese and Western cuisine. It is a gem of a fusion of playfulness and skill that gives sake a new appeal.
