ごうKatskoma hiragana labels in this production. This is the second Katsikoma Hiragana label this season. It is nice to be able to enjoy it twice in one year. When opened from the ice-cold cellar, it has a moderately gorgeous aroma of iso-type aroma. When you drink it, it spreads smoothly, but you can also feel the viscosity, and after the soft umami and gentle sweetness, the fresh acidity spreads at once. The bitterness can be felt in the mid-palate, and in the latter half, astringency and complexity increase and linger in the aftertaste. The taste is smooth and broad, with just the right amount of sharpness and bitterness, which is only possible with a hiragana label. When cold, the aroma of rice and sweetness increase, from sun to human skin, the sweetness gradually decreases and the umami comes to the fore, and when lukewarm, the smoothness and acidity come out, and from the upper roll to hot, the acidity and aliveness start to come out, and when it flies, the sweetness disappears considerably and the acidity and astringency are masked. When it is cooled down, the sweetness increases and the acidity is also felt. Personally, I prefer it cold from the flowers, but it is also interesting to add a little more.

osakanosakenomiIt's been a long time since I've had a drink at Katsuma. It is still delicious. The ginjo aroma that comes before you drink it makes you excited. Pure, clear and deep rice flavor. It would be more enjoyable to drink it with a glass of wine and not with a very rich meal. This sake is one of my top sakes.

としひこToyama food tour in spring without using any Hokuriku Ouenwari (tearful) 🌸 Following Toyama city and Toga village, the third day was in Uozu. The third stop was Sushi Daimon, which is a must in Uozu 🍶. Katsuma is a sake brewed in Uozu. It is Aruzoe's Tokugin. Aruzoe's Tokugin. It is a refreshing sake that doesn't interfere with the food. This is quite good.

ヒロOutside Drinking. CRAFT SAKE WEEK in Roppongi CRAFT SAKE WEEK Katsuma-san is very popular with a huge line up 😳. We decided to use the time in line as an interval to sober up a bit 😆. The color is clear. When you taste it, you first taste sweetness. After that, a little bitterness. The mouthfeel is light like water. The sweetness remains until the end. While the sweetness has a core strength, the sake is gentle on the palate. I guess you can also enjoy the aroma, but I can't tell when I'm outdoors. Too bad😅.

としひこSpring food tour in Toyama without using any Hokuriku Ouenwari (tearful) 🌸 Second dinner on the first day, "Raijin Kijin Hagiwara" 🍶. Toyama's famous Katsuma sake. It's hard to find as usual, but it's a delicious sake 😃It's always served here, too. It makes you feel like you've been to Toyama. Sashimi: Shiroebi (white shrimp) and firefly squid, a representative of Toyama's spring season, which has been released this month. I heard that the raw fish parts of firefly squid are not allowed to be eaten. So, they pulled out the guts and cooked them before serving. This is delicious😍Wata is the best part of firefly squid! It makes the sake go down a treat. The white prawns are also great, sticky and sweet. The bowl of sea bream and kuzu-zakura (cherry blossom) is also very spring-like 🌸.
