Kihanano Brewery, which is not allowed to brew doburoku due to its license, wanted to find a way to brew Hanagumori doburoku, so they asked Tsuchida Shuzo to brew their own recipe and brew it for them. The idea was to ask Tsuchida Shuzo to brew and press my recipe. The taste is beautiful but complex, with a light sourness that is typical of Hanagumori and a complex flavor that is typical of Tsuchida 😋

First, the sourness. Recently I have been drinking only muddy sake with strong sweetness, so I felt it was quite sour. The sourness is followed by sweetness, and there is a lot of rice flavor. The alcohol content is low at 13 degrees, but it is quite strong. If you drink only the supernatant without mixing, the rice flavor is less, but it is clear and good.

It was my first doburoku experience 🦅. It's so good! It's mild and fizzy, with a hint of sweetness and then a sourness from the lactic acid that makes you want to drink more right away! No yeast added (wild yeast) in Asakusa, so it's tough to beat the hustle and bustle of the city 😢. It's really delicious. I wonder if other doburoku is like this. I want to immerse myself in the doburoku world!

I carefully opened the bottle and it took about 15 minutes. It's a sake that you can eat with your eyes, with the grains of rice usually recognizable. Overall, the strong gaseous feeling gives a swooshing impression, so it's refreshing to drink. I liked it.

I've been curious about doburoku since it was featured in various media. Compared to muddy sake, the amount of rice grains is completely different. When you put it in your mouth, you can feel it sizzling. As for the taste, as the name implies, it's all about the acidity. It's a different type of acid from fruit, and it's from fermentation. From my personal taste, I think it would be better if it had a little more sweetness. Seems like they're trying a lot of new things, so I'm curious to see what the future holds for this sake!

This is a label buy (^^). The acidity and turbidity are amazing! The ori is amazing on the amazake level! (*^ω^*) In case you're wondering, has anyone tried this before? Holy shit, I don't know how to open it properly... I used a wine opener to remove the acid and then used a can opener to loosen it up... ⤵︎ Not the cap method, not the cork method...(*_*)

My first doburoku When you drink only the top of the bottle, it's thick, but the foam makes it refreshing to drink. When you mix it and drink it, you get a very thick and complex taste. But for some reason, it's easy to drink. It's still a very active sake, so I'm going to leave it for a while and see how it goes.

The items are not sake, but doburoku (cloudy sake). It may not really be in the scope of this app, but please bear with me. Even though it was hikari, it was more bukubuku than any other sake I've ever had. I wonder what the principle is.... The rice grains are still there, giving it a full doburoku feel, but the taste is dry, with less sweetness. The taste is dry and not too sweet, but it doesn't feel like sake in a bad way. It can be drunk on its own and can be drunk as is. It has an alcohol content of 13 degrees, so I think it will be accepted by a wide range of people, including sake beginners and foreigners. If this sake is a commercial success, it's likely that all sake breweries will start making doburoku. The capacity is 500 ml, so the empty bottles can be used to sell by weight. The design is also stylish.
