The first drink to open the mouth. It is a little hard and does not convey umami. After a little time, it opens up little by little and the light acidity and umami spread in a little roundness. Not bad ^ ^. This is a once-a-year trial brewing, this time with a low white rice of 70. This time it was a trial brewing once a year, but this time the rice was polished to a low 70.

It has a clean yet mild and mellow taste. I think it goes well with white meat fish. Sashimi is especially good with it. Personally, I think it is one of the best sake I have had in the past. I think it is well-balanced as a food sake.

Tonight's third drink. A challenging sake that dares to use rice carefully by keeping the rice polishing ratio at 70%. Personally, I am not familiar with Kyoto sake, but I like this kind of story!

Aozora R6BY Test Brewing Sake OMACHI 70 Junmai Sake Rated 4.4-4.3 Rice produced: Omachi from Okayama Prefecture, Polishing ratio 70%, Alcohol 15.8, Sake meter degree +3, Yeast used: Miyagi yeast It has a subtle sweet grain aroma, a soft attack, and a mild sweet umami flavor that expands and expands, but it also has a pleasantly clean finish and a lingering mild taste that slowly and gently fades out. Because it is a watered-down type, the mouthfeel is gentle even with low refining. Aroma: Orange. The touch is soft and gentle, so the spicy bitterness is noticeable.

The last sake of the 8th station was Souku from Kyoto. It is handmade entirely from junmai, and instead of mass production, the same tanks are used for junmai to junmai-daiginjo, and the same time and effort is put into the small brewing process. In other words, it is hard to obtain. Refreshing aroma and flavor. It was delicious. Alcohol content: 15%. Ingredient Rice 100% Miyamanishiki IngredientsRice (domestic) Polishing ratio 60 Yotsuya Minemura

Junmai🍶Nama Kusumi Sake🌫️Hatsu Shibori✨Miyama Nishiki🌾. Suddenly. Slight melon and bitterness. A little citrus 🍊 bitterness, maybe greeful. But a little Japanese taste. The sourness goes well with the takopotch ponzu vinegar. It also catches the oil from the fried lotus root clamshell. Umi to @Takadanobaba 20241227

Citrus with a nutty, aromatic aroma. Contains a clear texture. The nose is smooth, with a citrus-like sweetness, The flavor spreads from a smooth citrus sweetness to a full-bodied, rich flavor. The moderate bitterness gives it depth. Soft aftertaste. 4/5 stars for my favorite.
