Yoshino Hanami No.3 Continuing with Yoshino sake. This sake has a delicious flavor.
Made with 100% Nara rice, 60% polished rice, 16% alcohol by volume.
Purchased in Yoshino, Nara at the end of May. Yoshino is famous for its cherry blossoms, but I like the fresh green of early summer. Yoshino Brewery is more often heard of for Hanaboe, but a liquor store near Zaodo had this brand. The color of the sake was quite yellowish, so I thought it might have a strong sake taste, but it was a refreshing and easy to drink sake.
You can feel the acidity.
Even though it is a junmai daiginjo, it has its own personality.

Transparent with a slight yellowish tinge. It has a rich aroma with a yogurt-like aroma and a sweet aroma reminiscent of brown sugar. The aroma is slightly strong. It has a mellow mouthfeel. It has a yogurt-like aroma. It has a moderate aftertaste with a mild acidity and astringency. A full-bodied sake.
You can understand the flavor of the rice in this junmai sake. It is not too polished and brings out the full flavor of the rice, but has a mellow umami taste with high quality acidity. Savor it in a wine glass. It has a wonderfully mellow flavor, like muscat or vanilla. I bought it directly from Miyoshino Brewing Company.
I had a preconceived notion that Zao was a more solid sake, but this stylish label!
The taste is light. The aroma that escapes to the nose at the end is soft and gentle.
