It is a mild and delicious new sake. The label is also dated and limited to the brewery opening, so it is very special.
I am thinking of going to the Nasika Festival at Yatsuka Brewery in April.

Happy New Year! However, it is a tough New Year for the people of Noto. We humbly support all of you.
It is a hot spring in Beppu. This is Kamenoi Hotel.
Yatsuka cold sake and sashimi.
Delicious. Delicious even with brewing alcohol. It is in harmony with water.
Beppu has seafood, mountain vegetables, and hot springs.

The taste of rice was strongly present, with a hint of sweetness, followed by tangy alcohol, soft acidity, and bitterness, making it a sharp and delicious sake.

This place is more famous for its shochu, Ginza no Suzume.
I've bought it at a tasting and sale in Hankyu before, but I didn't know they served fresh sake 😳.
They use locally produced Nihonbaru and Gohyakumangoku.
It is fresh and has a good balance of sweet and spicy. The acidity is quite impressive.
Not very distinctive?
I'll check a little more and add more 🤔.
It tastes like banana and melon when I drink it again.

Today is Christmas Eve, but before I stopped drinking alcohol, I used to drink only wine and on Christmas Eve I used to drink champagne, so this year I'm going to try Japanese sake bubbles 😀.
From today until the end of the year, it will be a bubbly festival 😀.
I've prepared 7 bottles as you can see in the picture, but the challenge is wide ranging from classic bubbly to complete jackets 😀.
The one I'll be opening today is niji niji 🌈 from Yatsuka Shuzo!
This sake is a perfect jacket 😀.
I saw the label this spring and decided to drink it for Christmas, but I forgot where I bought it since it had been sitting in the fridge for more than half a year 😅.
It's a low-alcoholic and smooth sake, and even my father-in-law, who usually only drinks beer, said it was delicious and kept me company 😀.
