We received #Lion's Village Junmai Ginjo Hyakumangoku No Shiro from #Matsuura Shuzo in Kaga City, Ishikawa Prefecture.
Hyakumangoku No Shiro is the original sake rice used in Ishikawa Prefecture.
The aroma is mild yet fruity. The aroma is mild and fruity, but not so much that it interferes with the meal.
In the mouth, the fruity flavor is expected to spread, but the umami flavor spreads only lightly and disappears quickly and crisply.
It was a good sake to drink while it was still hot.
The moment you put it in your mouth, the acidity and sense of maturity spreads.
The umami flavor slowly flows into the mouth and fills it up.
The high alcohol content and deep flavor make this a sake that should be enjoyed slowly and sipped with delicious snacks.
Sake Mirai Origami
Sweet and sour aroma. And gas. Delicious! I like the aroma of this No. 14 series. Lime, Japanese pear, calm aroma. The elegance. Moderate hush. Bitter aftertaste. 90 points.
Sweetness: 2.8
Acidity: 3
Dryness:2.7
Hinted aroma: 2.8
On the first day of a three-day weekend, grilled sanma (mackerel) made an appearance. Hiyaoroshi" was the perfect accompaniment.
It is hiyaoroshi "Kizuna" from Matsuura Sake Brewery in Kaga Yamashiro Onsen.
It is brewed with Hachitan-Nishiki from Hiroshima.
When you take a sip, a gorgeous aroma spreads in your mouth, followed by the umami and sweetness of the rice, and then the acidity and moderate bitterness. The pairing with saury with a hearty belly is simply "delicious". It also rinses the mouth well.
In this age of aromatic and gorgeous drinks, this kind of sake is also important.
