It's interesting that the bitterness is in the aroma but not so much in the taste. The acidity is mild, but there is a tropical fruit-like fruitiness. The flavor is not intense, but the impression is soooo intense. A jackpot.

Brewing: Special Junmai Original Sake
Rice used: Fukunohana ・・・ It is said to be the original sake rice of Tajima area in Hyogo prefecture.
Rice polishing ratio: 60% ...
Alcohol level: 16% ... A little high
Sake degree: +2 ・・・ Normal. But you can feel the sweetness.
Acidity: 2.1 ... Too high! What? I didn't feel that at all.
Yeast used: In-house yeast
If I were to compare it to Ghibli, it would be like Okiyo from "Heisei Raccoon Dogfight Ponpoko". She is a raccoon dog, but she is cute. She is in love with the main character, Masayoshi.

The nigori is also good, but my wife prefers the light nigori, so I chose this one with the light nigori in mind.

At the end, it is good to feel that the miscellaneous taste remains. This may divide the taste. It would be good if the balance was a little better.

This is a 10 year old 60% polished undiluted sake. I've had the aged sake here before, so I just tasted it. Because it was stored in the warehouse, it has a beautiful aged feeling. For an old sake, it is refreshing and easy to drink.

At my favorite liquor store, there was one last bottle of "Chiyoda-kura" left.
It stood out so much that I picked it up and bought it on the spur of the moment.
