Fruity aroma. You can feel apples in the nose. The mouthfeel is clean and refreshing. It has strong acidity and umami, and almost no sweetness. The bitterness in the aftertaste is weak. It is refreshing and crisp, and is good as a mid-meal drink. 4/5

Here is the freshly squeezed new sake 🍶 that arrived at the liquor store today 😄. It is a dry 🍶 with a slight melon taste, acidity and dryness that spreads and finishes on the palate 🤔. Alcohol level: 16 degrees Celsius Rice polishing ratio: 60 Rice used: 100% Hachitan-Nishiki produced in Hiroshima Prefecture Price:1,694 yen

It is dry, but not just spicy, soft on the palate, and has a nice sharpness! Hiroshima sake is a handsome example of how good the water tastes. I enjoyed drinking this sake when I traveled alone in Hiroshima in the spring. ☺️ It tasted even better after the second day, when the corners were removed!

I don't often buy sake from Hiroshima... But I was encouraged to try it and bought it! It's made with that Sake Mirai! I have the impression that Houken is dry and has little umami, but I was surprised to see how much the taste changes when the rice is different. Fruity, but with a sharpness that is typical of Houken. It was good during a meal! I thought I would drink it after a while to see if the taste changes.

Charcoal Bar Ajito (6) It was the last order, and we chose the last drink to be consumed slowly over the next 30 minutes. ◉寳剱 Junmai-shu with a retro label The retro label is a straight forward and very striking one. The refreshing mouthfeel is followed by a pleasantly complex taste that spreads with a bitter acidity and umami flavor. The three-dimensionality of the flavor is a delight to the palate. I was quite drunk, but I think I was able to finish the last glass with a deep sake. I drank a lot and got drunk a lot throughout the day 🙏.
