The nose has a fresh cucumber aroma for a moment, then a sweet bouquet like candy cherries or pudding with black honey. In the mouth, there is a momentary sweetness and deliciousness of rice, and then a dryness, chili gas, and acidity like a bitter, spicy, and astringent adult soda. But I like the complexity of the flavor and the three-dimensionality of the taste because it is a sake yeast.
Dry Junmai sake is also delicious. ☺️
It was slightly effervescent and refreshingly dry. More and more sakes are being made with summer in mind, and I appreciate the efforts of those involved.
