The acidity is quite assertive and there is a bitterness, but it is clean and easy to drink.
If you drink it slowly and taste it, you will be able to taste the sweetness.
I think I learned that the way to drink it also changes it.
It tastes even better with sashimi.
Postscript
From the second day, it became a little more relaxed.
Even if you take the sake by itself, it's refreshing and sharp, but you don't miss the flavor and bitterness.
It is a delicious sake that can be drunk while cooking with the feeling.
Re-posting
On the fourth day after opening the bottle, the sweetness has increased greatly.
If you like the umami taste, you might want to drink it 4 days after opening the bottle.
It was a delicious sake that you can enjoy the changes in taste.

The rice used is Yamadanishiki from the Sato Plantation in Sosa City.
It is said to be free of chemical fertilizers and synthetic agricultural chemicals.
The sweetness is moderate.
The acidity is citrusy with a crisp, bitter taste.
Overall, it is a refreshing summer sake.
It is well-balanced and can be drunk easily.
The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...)
If that's the case, I look forward to it every year!
This year's was my favorite type❣️.
full of sweet and sour taste
Not the clean sweetness of a syrup, but a complex sweetness.
The sourness doesn't make the sweetness heavy.
This one's good when you're tired.
If you drink it chilled, it's already a sports drink
Mild acidity and a hint of sweetness on the nose
The taste is just sweet and sour.
The acidity is noticeable at first, but it soon turns into sweetness, and with a sake rating of -15 and an acidity of 2.8, it's easy to drink in spite of its strong flavor.
I was expecting it to taste sweet and sour, but I was betrayed in a good way.
Delicious.
