I drank "Sen" in April, and it was delicious, so I'm repeating it.

The brewery is "Kazuma Shuzo K.K." in Noto Town, Ishikawa Prefecture.
Their main brand seems to be "Chikka" and "Sen" was not listed on their current website, but they seem to make a variety of other good sake.

It was light on the palate at the beginning, but the acidity was very strong in the back, which is typical of the Noto style.
It is a dangerous sake that is easy to continue drinking because of its mild flavor from beginning to end 😁.
Today, we have Sen(Ishikawa gate) and Kangiku(nigori).

The aroma is clean and sweet.
When you put it in your mouth, the first thing you taste is bitterness.
After that, umami and a hint of sweetness follow.
It is a good sake that can be drunk leisurely.
It has a sweetness, and the flavor and bitterness come together nicely.
It is not sticky, and the whole drink is refreshing.
It is a good match when you want to drink it all by itself without any snacks.
It's a personal favorite, just hard to find...

Rice-umami later. Summer bitter.
Not that sweet when you drink it.
