The aroma is apple-like with a sharp sweet acidity, but the alcohol and umami are also clearly perceptible. The mouthfeel is mature, with a full-bodied sweetness and umami. ☀️ The rice is Ishikawa Mon, a sake brewing rice from Ishikawa Prefecture 🌾. I like the name, it's very cool 😎. It's sake 🍶. It has a very slight amber color 🟡. I don't know much about wine, but I thought the color was vaguely reminiscent of something you would find in wine 🍷. The taste is a mixture of sweetness like ripe apples 🍎 and a good amount of umami. The wine is very smooth with a slight acidity at the end 🤗.

Hi Gyve😄 I had never heard of Ishikawa-mon myself. I thought it was lighter and easier to drink than my image (including memory correction) of the bamboo leaves I drank in the past 😄. I'd like to drink Takeba again to see for sure 😆.
