This sake brewery seems to mature their sake in their own brewery until it is at its best before shipping, and this Hokushinryu is one of the rarer ones, being served as a raw sake before aging. It has a gorgeous aroma that spreads on the palate, and its sharpness makes it ideal as a mid-meal sake.

The smoothness on the palate and the mellowness of the taste surprised us.
The sweetness of the rice is of course present, and the umami flavor is concentrated.
I don't think this is a sake for beginners, but for those who love sake, I highly recommend it.
The pop-up sign at the sake shop said it was a "beautiful sake," and after drinking it, I was convinced.
