Kumamoto is famous for its rice shochu, and I am ashamed to admit that I did not know any sake.
I had not seen much Kumamoto sake in the Kanto region. I happened to be in a supermarket where I saw a label with a Kumamon front and had my first taste of Kumamoto sake.
It is a delicious sweet sake. It does not have many peculiarities. I thought rice shochu would be the best match for spicy lotus root, but I guess it would also be the best match for Chiyono-en.

I quite like the sake called "Taido" here, so I had high expectations for it.
Sourness from a hint of sweetness. It is a very sour sake.
I expected it to be a bit sweeter, but alas 🤣.

I ordered "Kappo sake" at a Jidori chicken restaurant. If you ask me, it is the local Chiyo-no-en. Kapposake is made by putting sake in a green bamboo tube and heating it up in a hearth or over a bonfire, and it is said that the sake with the aroma of green bamboo becomes a special grade of sake. It's a perfect match for local chicken. I was able to enjoy the beauty of local production for local consumption early in the New Year, and I had a feeling it was going to be a good year.

The last of the sake purchased at the Hankyu Department Store Brewery Festival.
It doesn't say so, but according to the Hankyu Department Store's mail order site, it's made with Hananishiki, Kumamoto's preferred rice for sake brewing. It was Honjozo until last year, but they upgraded it to Junmai.
It has a gassy, light sweetness. It's refreshing and has a slight bitterness at the end. More delicious than I imagined.
