The direct sales shop at Shotoku's sake brewery is only open on weekdays, so despite being in the neighborhood, I had not been able to go there.
I finally went there and bought a bottle of hiyaoroshi (freshly brewed sake), which had just come on sale.
The flavor spread rapidly as I rolled it around in my mouth, and it was a lot of fun.
It is delicious.

Today, I met again with the branch manager of a distributor who was a great help to me when I was working as a manager in Kyoto 16 years ago.

The new sake, which was young and rough when it was pressed, underwent a fire-quenching process just once and is now ready to drink after a period of maturation. After one summer in the bottle, the flavor components in the sake are brought out, resulting in a harmonious and mellow taste. This Junmai Ginjo Hi-ire Genshu has a slightly dry, full, and elegant flavor.

The sake rice is "Celebration" which I have never heard of.
This one also has a clean, daiginjo-style mouthfeel, but the aftertaste is gentle and clean. It also has a gentle aroma of rice!
I prefer this one. I like this one better. It seems to go well with everything, even as a food sake.

October is a set of two sake from Kyoto, Shotoku.
The first is Yamada-Nishiki.
It has a beautiful daiginjo-style mouthfeel, followed by a kick of bitter acidity. This is a sashimi! I want some sashimi! But I'm eating yakiniku today🤣but meat is meat and sake is sake, so no problem👍.
