Souvenirs of Hikone Day Trip No. 4
This is also purchased at a souvenir shop near Hikone Castle.
It is rare to find it in Kansai.
At room temperature.
Slightly strong aroma peculiar to sake, slightly yellowish in color.
The color is a little yellowish. A little bitterness.
The mellow flavor unique to Yamahai gradually spreads in the mouth.
The ginjo aroma is citrusy and refreshing.
The flavor of rice spreads in the mouth and goes down the throat nicely! This brewery faces the same old Tokaido Highway as the Furukawa Sake Brewery that I posted last time, so it is close to this brewery in terms of distance.
I would like to drink this when it is bare.
One Friday night. The last drink after drinking a lot.
I️ only remember my impression of the combination of umami, sweetness, depth, and this and that.
After leaving the restaurant, we went to a certain snack bar in Nakasu 😅....

The boss of Kinsho-kai bought a rare bottle of Doukan, so I asked him to share it with me.
The first sip.
Oh, is it a little heavy and fruity? Yes, the Doukan was quite heavy in quality.
The sweetness was chocolatey and brandy-like. The fruitiness is apple-like. I honestly thought that the fruitiness of the sake made it difficult to drink. I thought it was difficult to drink.
I tried drinking it again on three separate days.
Surprisingly, the fruitiness was okay. The lingering bitterness in the aftertaste is like cocoa. I think I can also pick up an astringent taste like black tea.
While looking it up on the Internet, I learned that the Ota Sake Brewery also makes wine and brandy. I wondered if the brandy technique is also used in sake.
I got the impression that it is a very drinkable and robust sake. I would like to visit the brewery.
