It has been quite a while since I have had a sake from Gifu.
It has a delicious rice flavor and acidity.
It also has a nice sharpness.
I had it with sashimi and sushi and it went well with them as the label says 🍣.

Kozaemon Tori-Label [Gifu Prefecture, Nakajima Brewery
Sourness on the palate with a hint of sweetness. Apple and saltiness. The lingering astringent taste and alcohol taste.
Ingredients: Rice (domestic), Rice malt (domestic)
Rice used: 100% Miyamanishiki

Slightly carbonated bubbles attach to the vessel.
Not dry, this sake is gorgeous and easy to drink.
It is my personal favorite.
Brewer's comment: "Sake made with locally grown rice. An unfiltered, unpasteurized, jicagumi sake. It has a strong aroma and flavor, with a pleasant, chili-like, slightly carbonated aroma and flavor rich for a daiginjo, so it goes well with dishes with strong flavors, such as fried chicken, chili shrimp, and nameko mushrooms."

The umami is assertive and robust.
The fruity sweetness is in full bloom. It is a sake that can be drunk on its own, so we will enjoy it on a GW evening.

It is slightly cloudy because it is orikara-mi.
Since it is also a nama-shu, I thought it might have a gaseous taste, but I did not feel it. I thought it might be gassy, but I did not feel it.
It is a dry sake with just a hint of sweetness, acidity and bitterness.
Purchased by the bottle at a local liquor store. It is a Junmai Daiginjo made from 100% Asahi no Yume, 50% polished rice. I had it cold.
The aroma of tropical fruits is not unlike the fruity sweetness of a pineapple on the palate. The bitterness follows at the end. This time, we served it with grilled eringi mushrooms and grilled horse mackerel using Aburiya 2, but we prefer it as an aperitif or after-dinner drink to enjoy its sweetness.
