My friend caught a Kampachi with PE line No.3
tackle of about 1.8m and 75kg.
and 75kg yellowfin tuna
so I got a share of it, and
I whipped my exhausted body after

It is a local sake of Ehime. It looks a little amber in color and smells a little sweet ginjo aroma. It is soft on the palate, and the sweetness and flavor of the rice are well balanced, yet it has a sharpness that makes it easy to drink.
Speaking of Saijo, Hiroshima is famous, but Saijo in Ehime is not bad either! We enjoyed it with sashimi of local fish from the Kurushima Strait and ponzu (a kind of ponzu sauce made from albacore).
I'd like to explore more sake from the Toyo region.

I've been curious about it for a long time.
I bought a bottle of Nihonshin's glutinous rice 4-step brewing
which I had been interested in for a long time. It was a little yellowish

Ehime's cup sake series. This is also Japanese heart. It's very nigori and it's rough in the mouth. The strength is high and the taste is rich. It has a good balance of sourness and sweetness, but it's a bit heavy. I've never heated nigorizake before, but I warmed it up first. Then it became fluffier and smoother than before, and the mouthfeel was good. It's interesting.
A cup sake series from Ehime. It has a strong flavor that is typical of a regular sake, but with an aroma and flavor that spreads slowly. The nice thing about cup sake is that you can heat it up as is, and as expected, it's great when heated. The sweetness and umami stand out.
Ehime's cup sake series. It has a wonderful dry taste that cuts into the tongue. It is a sake like a samurai that expresses the Yamato spirit. There is no dullness, and you will find yourself drinking it all the time.
Founded in 1904 (Meiji 37). In Saijo City, there is a famous water called "Uchinuki," which gushes out from everywhere in the city throughout the year thanks to Mt. Every household in Saijo City can drink this famous water for free when they turn on the faucet.
This brewery uses Uchinuki as its brewing water and brews sake using only Yamada Nishiki from Hyogo Prefecture and Matsuyama Mitsui from Ehime Prefecture.
I was thinking of going to buy it on the weekend when a fellow supporter (a family member of Takeda Shuzo) brought it all the way to me. And they even included sake lees!

I bought this for heating sake.
The reason I chose it was because when I went to Dogo Onsen on a trip before, I had a lukewarm sake at a small restaurant near the inn that was very good. A specialty? It was also a great match for the jako-ten (fish cake).
The aroma is fruity and reminiscent of cemedine.
The sake is +13, which is super dry, but it doesn't feel that dry, and as it warms up, the umami comes out, and as it cools down, the sweetness comes out.
It goes very well with seared squid and braised amberjack.
At room temperature and warmed up, it's a completely different sake, so it's a two-for-one deal.
