I bought this for heating sake.
The reason I chose it was because when I went to Dogo Onsen on a trip before, I had a lukewarm sake at a small restaurant near the inn that was very good. A specialty? It was also a great match for the jako-ten (fish cake).
The aroma is fruity and reminiscent of cemedine.
The sake is +13, which is super dry, but it doesn't feel that dry, and as it warms up, the umami comes out, and as it cools down, the sweetness comes out.
It goes very well with seared squid and braised amberjack.
At room temperature and warmed up, it's a completely different sake, so it's a two-for-one deal.
