It looks amazing; there's a lot of solids floating around, about 1 square millimeter clearly visible, and I wonder if that's partly due to the aging process since it was made in December 2018.
The mouthfeel is mildly sweet and fizzy, which is very rare.
The sweetness of the rice and the sourness of the lactic acid are also characteristic of this cute sake. It has less bitterness and flavor than Yamahai. But the overall impression is strong. The aroma that goes through the nose at the end is also wonderful. It is very delicious.
If I were to compare it to Ghibli, it would be "My Neighbor Totoro"'s inside Totoro. Commonly known as the blue one. Basically, it looks like Kikutakayama Haiyu from the Big Totoro movie, but it's much cuter. I want to pick him up! But I'm still out of man's league, and I'm 679 years old.

After a quick taste, we'll start with the chrysanthemum hawk henbush.
This is a sweet mountain waste.
The aroma has a pleasantly rich, alcoholic feel of mountain waste and looks delicious. It's very exciting.
On the palate, surprisingly, the first thing that comes to mind is the firm sweetness of the rice. The lactic acid and fruity sourness make me think it's a refreshing sake. But after that, the full-bodied umami and bitterness that is typical of Sanpai spread slowly. The sweetness and sourness remains until the end.
This one was manufactured in February 2017. It's fresh, even though it's 3 years old on draft. Excellent.
If I were to compare it to Ghibli, it would be Totoro from "My Neighbor Totoro". It's like nature that is out of our control is alive. It's big and profound. But it's cute.

Sake from the now defunct Fujiichi Sake Brewery
It has a mellow and sweet taste that is not like the traditional chrysanthemum hawk.
Slightly acidic aftertaste, but well balanced overall.
It is the last chrysanthemum hawk.
It has a unique and gorgeous aroma, mellow and mellow, sweet and sour, and it's tender on the tongue, but it's very crisp!
It is very tasty after all!
