Sake Nigori produced with the ancient Bodaimoto method, now in disuse, in which raw rice is mixed with water before being steamed in order to obtain a water rich in lactic acid ("soyashimizu") in the fermentation starter, fertile ground for rice and koji to grow and proliferate. This technique is reflected in the product, in which we find a preponderant lactic and creamy part combined with a particular presence of umami and good body.

Such a unique find here in Australia. A bodaimoto nigori from Okayama. Rice aromas surrounded by a yoghurt lactic edge underlying with some fruit characteristics. Creamy, fruity with loads of peppery spice. Such a delight!

It has a lactic acid-like aroma. Mellow and dense. Is it because it is matured? Even if the aroma is as strong as sansho (Japanese pepper), it has a good strength. I was able to buy it for less than 1,000 yen at the supermarket, but this makes me happy!

100% Omachi rice produced in Okayama Prefecture Rice polishing ratio 65%. Alcohol content 17 degrees The taste of the rice is sweet, the flavor of the rice is strong, and the stimulation of the sake lingers on the tongue forever. It has a thick, dark taste, but the acidity is strong, making it juicy and refreshing. The alcohol content is high, but because of the refreshing aftertaste, the spiciness of the sake seems to be restrained. It's fresher and more refreshing than the previous GOZENSHU9's Green (fire-roasted), which I prefer.
