Memorandum
This is my first Katsikoma.
It is not gorgeous, but it is easy to drink.
It is spicy but not too spicy, and the umami spreads and gives a sense of nostalgia.
You can drink it all the time.

Katsuma after a long time!
This time it's a special Honjozo, honjikomi!
Almost no aroma.
Rice polishing ratio is 55%, so it's very refreshing.
Easy to drink!
But to be honest, it has a bit of an "arosoe" taste.
It's a sake that is typical of old Japanese sake.
If I had to say it's alkaloids, I'd say Rakujutsu is better...

Ishikawa and Toyama, also from the Hokuriku region, had a booth at the Bishu Competition in Hokuriku ✨.
Looking at the Toyama booth, I had to ask for it if I could drink it 🤣.
Kachikoma Daiginjo.
The sweet aroma of rice with a hint of alkaloids, the umami that flows smoothly through the body with a clean mouthfeel and a mellow sweet aftertaste from the sweetness of the alkaloids.

I bought it about a month ago and finally opened it today.
It has no sweetness, no cloying taste, and it is not fruity, but that does not mean it is difficult to drink.
The aftertaste is not felt just by drinking it, but when you roll it around on your tongue, you can taste a melon-like flavor.
It is a traditional sake that does not assert itself, so it seems to go well with a variety of dishes.
I am a person who drinks sake alone, so I savor it while sipping it.
It is hard to get if the timing is not right, but Katsikoma is still delicious.
Usually I drink only one sake, but today I think I would like to drink one more.
