It has a beautiful mouthfeel. It does not push out the dryness of the sake, nor does it insist on the flavor of the sake, but it makes you feel glad to have Katsuma after enjoying the food. While playing a supporting role, it definitely makes its presence felt and enhances the total quality of the food. Since it is not easily available, I think it is a good thing that this sake can be enjoyed at restaurants.
The second drink was a sake from Toyama.

I spent a relaxing weekend with my family for the first time in a while, and since I had Monday off, I went to the gym as usual to digest the menu. In the evening, my wife and I celebrated our two-month delayed wedding anniversary by going to 🐰 at her request again.
This time, I asked my wife to choose the dishes she wanted to eat and let her taste the owner's cooking to her heart's content 🤩.
I also brought a special sake to go with her exquisite dishes to celebrate our anniversary 🐰.
Katsuma Junmai-shu Shiboritate Nama!
The aroma of mellow sweet rice with a hint of creaminess, the mouthfeel is smooth and mellow, the flavor is sweet, and the taste fades out quickly, leaving a pleasant aftertaste and a lingering sweetness on the tongue.
The taste is so clear and beautiful that it is hard to believe it is junmai sake ✨The flavor is not lost as you continue to drink it, it is simply delicious 😋.
I heard this one was in stock at the Echizen Sake Shop HAYASHI SAKE STORE at the end of February and went to buy it a few days late, but I didn't expect to find it hidden in the back of a cupboard and got it right after it was put on display 🤣.

This is my first junmai ginjo.
Unlike the umami aroma of the last junmai sake, this one has a flashy ginjo aroma. The aroma of shaved Yamada is strong.
The balance of the flavor is the same and balanced. The less umami component is more noticeable in the fruity flavor.
Personally, I prefer Junmai sake as Katsukoma.

The lack of egglessness is amazing when compared to other honjozo.
It is like a junmai sake.
It has a rich aroma and a strong umami flavor, but it is not heavy, easy to drink, elegant, and delicious.
When I was a student, I was working part-time at a pub.
I remember drinking Katsuma for the first time and being shocked at how fruity and delicious sake could be 😊.
At the time I thought it was still fruity, but now there are so many fruity sake on the market, so I guess it's not as fruity as those.
I don't think it's fruity 😅.
I think the sake I was drinking at the time was junmai sake, but this is daiginjo.
Next time I want to try junmai sake after a long time.
It has a gorgeous ginjo aroma like melon or muscat, and is smooth on the palate. It has a gentle sweetness and rice flavor, with a clean and crisp finish. It went well with meals.
