After a long-awaited and superbly restful stay at Rakan no Yu, we moved to Saga City and went to a yakitori restaurant 🐓.
One of the two local hiyayadoroshi (sake)
The fresh one is also quite dry with plenty of umami on top ⚡️ and a long lingering bitter taste 〰︎
The robust flavor goes well with fatty yakitori.
The lotus root in the picture was delicious👍
Super-harakuchi Omachi Special Junmai Namazume
Good sharpness. It disappears in a flash. It is quite soft on the palate. I heard it was Omachi, so I looked it up and found out that it can also be warmed up.
It has a unique taste with a well-balanced combination of umami, acidity, dashi (Japanese soup stock), and a piquant spiciness.
It is unique but not assertive or peculiar, making it easy to pair with food.
The spirit of not going with the latest fads and following one's own path is something that is similar to Okura's.
