The 2017BY afs has been stored in red wine barrels for 3 years, bottle-stored in a warehouse, and aged in ice for 8 years. It has a sweet caramel aroma from the aroma of hojicha (roasted green tea) and vanilla aroma as the temperature rises, which gives a good impression. I had imagined it to be rich and sweet like a noble sake, but to my surprise! Sour (lol). I tried a blend of old and young with a little bit of sweet Hizirizm (sake degree -100, acidity 6.0) squeezed from the sake mother (yeast), and found it to have a light sweetness, a deep astringent taste, and an acid profile. The blend with the rich sweetness of Hon Mirin Golden Honey Sake was the best.
