Hmmm? The taste is different from the previous AFS.... The acidity is excellent, but it tastes like rubbing alcohol (ethanol?) in wine sometimes. It tastes like rubbing alcohol (ethanol?).

Sake made with sake instead of water is called kijoshu.
And then, this one is brewed with sake.... (Am I right?).

I bought AFS, which I liked after drinking it at an izakaya before.
It has a strong acidity and tastes more like wine than sake.
It is quite tasty and makes me want to try another kind.

The sweet and sour acidity reminds one of white wine, fruit wine, plum wine, and apple cider vinegar. It is too much to drink with a strong acidity and a taste that does not lose to strong flavored dishes.
You don't feel like you are drinking sake, but it is delicious!

The 2017BY afs has been stored in red wine barrels for 3 years, bottle-stored in a warehouse, and aged in ice for 8 years. It has a sweet caramel aroma from the aroma of hojicha (roasted green tea) and vanilla aroma as the temperature rises, which gives a good impression. I had imagined it to be rich and sweet like a noble sake, but to my surprise! Sour (lol). I tried a blend of old and young with a little bit of sweet Hizirizm (sake degree -100, acidity 6.0) squeezed from the sake mother (yeast), and found it to have a light sweetness, a deep astringent taste, and an acid profile. The blend with the rich sweetness of Hon Mirin Golden Honey Sake was the best.
Hi Jay & Nobby! I'm a fan of the "quirky" types, and it's a great feeling when you get to the point where you like the combination of temperatures and blends, but the end result is often an Asahi Hawk 😂.
