Echigo-Tsurukame's specialty is the wine-flavored sparkling sake made with wine yeast, which is easy to drink despite its high acidity.
But today, I chose the Yamahai Junmai Ginjo Genshu.
The "ya" labeled Yamahai will be discontinued at the end of this season and will be part of the Koshigo-Tsurukame series from next year, so this is the last ya.

We tried Shin Takachiyo, a new series of Hiruzake Gentei.
It tastes quite light with a grape-like sweet and sour taste, almost like a juice. A test brew using Mahoroba yeast, and that there will be a second one next year. The design, reminiscent of Eangeon, was also very nice. I was still attracted to Kyokutaka and Takachiyo.
The first chapter of the Kyokutaka series, which is brewed using sake rice from all over Japan with a flat rice polishing rate of 59%, is a one-off!
Takachiyo Brewery manages the source rice, and uses only rice grown in-house or by contract farmers.
