The aroma is already sour. It is also very sour when you drink it. Then, it has a strong sweet taste. Is it easier to drink than the Banshu Issen garden sake I drank in the past? Purchased at SAKE BOX Sakashita-san. Shitaizumi is my favorite Shizuoka sake. It is a challenge sake from Shidaizumi and is limited to 300 bottles. They said it is the base sake for Shida Cidre. It is slightly effervescent and has a strong but gentle sweetness. There is a slight bitterness towards the end. It is sweet but has a strong alcoholic taste, making it a little difficult to drink. According to SNS information, it was released last year, but I didn't see it at all, so I wonder if it was only distributed in very small quantities. I missed out on buying it last year so I was determined to drink it this year. Purchased at SAKE BOX Sakashita-san. I just bought it, but I opened it early because I was afraid it would become too active and strong. It was very gassy and hard to open💦. It's schwishy and has a lactobacillus drink, yogurt, and apple-like taste. Pleasant acidity and trace bitterness. It has a strong sweet taste, so I don't think it should be paired with sweet foods. There is a sense that it takes away the sweetness of the meal.

I went to a liquor store because I wanted a sparkling wine called ShuShuShu by Hanagaki, but it was sold out.... I had no choice but to choose this one. I thought Aizan looked unusual since Izumihashi is known for its own rice, so I bought it. Izumibashi Jungin Aiyama🎵 Izumibashi Jun-Gin Aiyama🎵 It's fresh, mild, sweet, gentle and elegant on the palate. It's so refreshing, I'm afraid I'll drink it lazily. It says it's lightly cloudy, but it's only a little bit cloudy.

Purchased at SAKE BOX Sakashita. I've had Yamadanishiki in the past, but I missed out on Aizan the year before last. KAIUN very good Aiya Ma🎵! Muroka pure rice Aiyaama🎵 😸😸😸😸😸 😸 It's a little gassy, beautiful, gentle and sweet. On the other hand, I can feel the strength. I have the impression that Yamada Nishiki is sweeter, but Aizan is also interesting.

It's the smallest brewery in Hiroshima Prefecture. It seems to be the smallest brewery in Hiroshima Prefecture, or rather, it seems to be a brewery that has never been outside of Kumano Town until now. They only make about 80 bottles a year, or about 10 in recent years, and last year the brewery was closed due to the Corona disaster. The brewery's toji (brewmaster) and his wife used to brew it together, but there was no successor, so they invited a new toji in his 30s and started over. He used to work for Taketsuru Shuzo and Kitajima Shuzo. Purchased at SAKE BOX Sakashita in Konohana-ku. The lot shipped in December was +10, but the January lot was +14, which I think is the highest level of sake I've ever bought. The label on the back of the bottle shows that it was previously unincorporated, but from the January lot it was changed to a joint-stock company. The new label with the horses facing each other is very cool. They only had one bottle in stock. Even with the same label, the taste seems to be different depending on the lot. It's not as spicy as it should be, with a fruity sweetness and a strong acidity. Once again, sake is profound. I've tried it at room temperature, cold, and warmed, and I'm amazed that it doesn't change much.

I bought it at SAKE BOX Sakashita in Konohana, a liquor store located in a UR housing complex. They have Tenmyo, Hioki Zakura, Benten Musume, Umezu no Ikegan, Shinomine, Hanaboe, Shitaizumi, Kaiun, Tamagawa, Izumibashi, Wakaze, Kenryo, Hamae Hakubai, Ine Mankai, Daigo, Asahi Kiku, Amanoato, Hakuin Masamune, Gozenshu, Eiketsu, Chushingura, Shiryu, etc. It's very swirly and has a citrusy sweet and sour taste. Dry overall, with a slight bitterness at the end. More delicious than I expected and my favorite type. This is the best active nigori I've had recently. My family loved it and I emptied it that day😅.

This is a direct-pumped version of the Junmai Daiginjo made with Nihon Haru. It has a unique flavor but you can feel the sweet and sour taste. It is not a scent type, but the taste is gorgeous. It has a little cemedine taste.

It has a sake strength of +18, which is not something I would normally buy, but I don't think it's too spicy. Perhaps it's because it's been watered down, but it's refreshing and easy to drink cold. If you warm it up as recommended by the brewery, the acidity becomes more pronounced and interesting. Heating sake is fun. I heard that the brewery brews sake for each rice producer.
