The third cup was Tenzan from the Tenzan Shuzo brewery in Shichida, also a first for me. This is also a first for me. Easy to drink, but with a strong kick. This restaurant has introduced a sake anti-oxidation device called "WHY NOT". The system works by inserting a bottle of sake upside down with a special lid, and a certain amount is poured into a glass. The only drawback is that it takes a little time. It was getting crowded, so I had to leave.
The second glass was Junmai Ginjo. It is round, a bit schwitty, and has a strong umami and bitterness. The refrigerator in front of us is full of bottles sorted by brewery. Just looking at them is fun.

This is the first restaurant I found in Oimachi. The interesting name of the restaurant attracted me, so I peeked in with trepidation. They sell 200 kinds of Saga's sake. The owner, a woman, is a one-operator. She showed me how to order, and I had my first Toichi. It was smooth and dry.

Kouei Chrysanthemum
Aroma: Fruity, soft attack. Taste: clear and tasty, with a slight acidity. It goes in smoothly and has a good sharpness.
Koei chrysanthemum is delicious after all.

Slight aroma, sharp attack. Taste: dry and almost umami. It is easy to drink and has a dry aftertaste.
It is like a food sake that goes down smoothly. Slightly dangerous.
