Refreshing summer-like acidity and sweetness. It is typical of Kaze no Mori. For my taste, it would be great if it were a little more crisp. Surprisingly, the second and third days were also delicious.

Shinsei Ecru Junmai Raw Rice <Akitashakomachi (produced in Akita Prefecture) Rice Polishing Ratio Koji: 40%, Kake: 60%. Alcohol: 15 degrees Sake degree? Yeast : MISHOP 6 Sweetness is strong. At first I thought it was a bit sweet, but after a couple of days it started to taste good. It has a nice aroma and a mild sweetness. Good.

Nabeshima Ginjo   SUMMER MOON (Kashima City, Saga Prefecture) Nabeshima summer moon Buy at Machidaya Rice used: Yamadanishiki 50%. Sake degree +3 Acidity 1.3 It is a refreshing summer sake with a good aroma and a good sharpness. It is easy to drink even on a hot day! It was gone in a flash.
