It is said to be a doburoku made at a guest house called Toono in Iwate Prefecture. Active raw. It is very effervescent, and just a little twisting of the lid caused the bubbles to swirl and bubbles to stop. So I transferred it to a cup as soon as I emptied it and closed it immediately. There was almost no sweetness, just a nice freshness from the fizz and a tight acidity! It was like drinking doburoku at a doburoku brewery! It's like drinking doburoku at a doburoku brewery! Delicious! The alcohol content is light at 9 degrees. From the website Minshuku Toono White Label is characterized by its strong effervescence and sharp taste. It is brewed with only water, rice, and rice malt without any filtering, mixing, or fire pasteurization, and has a completely "raw" taste. The brewer says, "Black Label is not this light. Black Label is not this light and has a high alcohol content. I would like to try this one too. Purchased at Mizuguchi Sake Shop.

This is delicious! It looks like nigori sake that has long been loved by the locals in Hida. There is a lot of lees in this bottle! Even after being left for a long time without shaking, 80% of the bottle was pure white with lees. I thought it might be sweet with this much lees, but when I drank it, it was surprisingly dry. It was the kind of sake that I would like to drink on a daily basis. I envy people in Hida who can usually buy it!

This is a cloudy sake from the Kikusui Shuzo brewery in Niigata's Shinobata City. It is a liqueur. It has a sweet taste, so it tastes gentle like amazake, but it is also 21%. It is also 21%, but there is no trace of spiciness, so I would have drank it even if they said it was 6% 🤭. We had a muddy sake competition at a friend's house, it was fun ✨.

Yukikko was given as a return gift from Ofunato City's hometown tax payment last year. It is a long-selling winter-only item. I love it, but I rushed to donate it at the end of the year when I found out it was a Furusato tax return gift. Drunken Sake Brewery Alcohol content 20% (!!!) It is a cheap, high alcohol content, muddy sake, but even though it is mellow, it is easy to drink because it is active and has a refreshing, slightly carbonated taste. I wonder if it has a little sweetness. Danger of drinking too much: ⚠️ The can with the illustration of Snowy's illustration is so cute💕I want to keep it in my house. The size is also just right.

Housen Kumo 2023 Doburoku (Active) Ingredient rice: Asahi produced in Unzen, Nagasaki Prefecture (home-grown) Rice farmer Takeda Katatsumuri Farm Brewer Hayato Hyuga Alcohol 13%. Senjo Souzou Jar Dejima, Nagasaki City Purchased at Mizuhashi Sake Shop. A lively, vibrant doburoku! I thought I opened it gently, but the lid blew off with a loud pop, just like champagne! The lid blew off. Even after I opened it, it kept re-fermenting and re-fermenting. The bubbling never stops. When I drank it, I found it to be the best! It tastes just like the freshly brewed doburoku we had in Nihonbashi and the doburoku bar in Asakusa the other day! It has a strong, shwashy taste, and you can easily enjoy it without worrying about the sweetness, leesiness, or roughness. But it still tastes like sake. I wonder why doburoku, which is often sold in bottles, has a taste similar to amazake, and I often use amazake to explain the taste to people. Doburoku is far from amazake. This Ho-Sen is a doburoku from a nice store run by a couple (apparently) in Dejima, Nagasaki. I heard that the husband makes doburoku and the wife runs the store. I really want to go there!

Today I just had a glass of Yuzu and Nigori Sake liqueur🍸 before going to bed. Alcohol content 6%. Ingredients Sake Sake Sugar Yuzu juice It is a low-alcohol liqueur. I got it as a gift and didn't drink it very often because I thought it looked too sweet, However, when I drank it with ice, the bitterness of the yuzu juice reduced the sweetness, which was a very good balance. The yuzu juice is more authentic than I had imagined and very tasty. I thought it would be surprisingly good as an aperitif or just a drink before going to bed at night. As the description says, I think it would be great as a frozen sorbet. It was good for a gentle drink before bed.

Doburoku from Ina, Nagano. It was active but not that gassy. Maybe because it was too cold? It has a lot of lees, almost like amazake. It has a strong sweetness and low acidity. The alcohol content is also quite light at 6%. The low acidity gives the impression that it is not active, but maybe that is due to the storage conditions? Maybe it is a problem of temperature control? I am not sure about many things. The next day I drank it. When I drank it the next day, I could taste more sourness and slight carbonation than yesterday. I wonder if the re-fermentation process has progressed a bit because I opened the package once.

Asakusa, a doburoku brewery. We had several kinds of freshly made doburoku. We started with a standard doburoku called Hanagumori. It was very different from other doburoku, which are bottled and distributed in large quantities. It has a rich flavor, but is not too sweet with a strong acidity, making it very easy to drink. The one made with dashi (I lost the name) is unique but very tasty. The doburoku with peaches is also excellent. Lately I have been thinking that doburoku is the best drink among all cocktails in the world when it comes to pairing with fresh fruit. I bought some Hanagumori and amazake to-go. I thought the amazake was the best amazake I had ever tasted.

Active doburoku. 16 degrees. I drank it chilled. It had a nice acidity and sweetness. There is not so much lees, and it is not so different from a darker cloudy sake. It has a light and refreshing taste, The freshness characteristic of the active flavor makes it easy to drink as much as you want. Very tasty.
