A lively, vibrant doburoku!
I thought I opened it gently, but the lid blew off with a loud pop, just like champagne! The lid blew off.
Even after I opened it, it kept re-fermenting and re-fermenting. The bubbling never stops.
When I drank it, I found it to be the best!
It tastes just like the freshly brewed doburoku we had in Nihonbashi and the doburoku bar in Asakusa the other day!
It has a strong, shwashy taste, and you can easily enjoy it without worrying about the sweetness, leesiness, or roughness.
But it still tastes like sake.
I wonder why doburoku, which is often sold in bottles, has a taste similar to amazake, and I often use amazake to explain the taste to people. Doburoku is far from amazake.
This Ho-Sen is a doburoku from a nice store run by a couple (apparently) in Dejima, Nagasaki.
I heard that the husband makes doburoku and the wife runs the store. I really want to go there!
